    Glenfiddich Fire & Cane Experimental Series #04 is a Single Speyside Malt Scotch Whisky matured in peated malt from another of William Grant & Sons' distilleries, ex-bourbon casks and a finish in rum casks and bottled at 43%. The whisky combines a small proportion of peated malt from another William Grant & Sons distillery with Glenfiddich's classic ex-bourbon-matured spirit, which is then finished in casks that previously held rum. The result is the fourth release in the Experimental Series and one of the most unconventional whiskies Glenfiddich has made.

    Nose

    Light smoke, burnt sugar and a warm, tropical rum sweetness.

    Palate

    Sweet and spiced with smoky caramel, tropical fruit and a muted smoky base note.

    The whisky originates from a bespoke bottling Compass Box once created for a cocktail bar named The Spaniard in New York. John Glaser and his team later decided to explore the sherry-influenced style further and make it a permanent part of the range under the name The Story of The Spaniard, first released in 2018.

    The whisky is a blend of Highland and Speyside malt whisky, of which a significant portion, around 48%, is matured in used sherry casks, while a further 25% has aged in casks that previously held Spanish red wine. The rest of the blend contributes lighter, fruitier notes that balance the heavier, dark cask influence.

    Ex-Tennessee casks are a rare sight in a Scottish warehouse. Evolution is built on them alone, which makes it one of the more unusual bottlings from the north coast.

    Glenglassaugh Evolution is a Single Highland Malt Scotch Whisky matured in first fill ex-Tennessee casks and bottled at 50%.

    The whisky carries no age statement. It is non-chill filtered and of natural colour, and the 50% is chosen to hold the cask spice and the sweetness of the malt up at the same time.

    The casks are hand-picked, and because they are first fill a lot of wood comes through. The result is a drier and more peppery whisky than the sherried part of the range.

    Nose

    Sweet barley, pineapple and soft buttery vanilla. Deeper oak spice and caramelised pear develop after a while.

    Palate

    Robust, with white pepper and oak running through crisp green apple and freshly cracked barley. A gentle salted caramel emerges alongside ripe banana.

    A copper dog was a home-made tube that distillery workers dropped into casks to smuggle whisky out in a trouser pocket. The name is a nod to that small crime.

    All eight distilleries sit in Speyside, and the whisky is conceived as a distillation of the region's style rather than a portrait of one house. Copper Dog was developed at the bar of the Craigellachie Hotel, which is also where the name comes from — distillery workers used a small copper tube to draw an unauthorised sample from a cask. Diageo is behind the bottling.

    Nose

    Fruit-driven and light. Apple, pear and honey first, then a lightly spiced note over a warm malted base.

    Palate

    Soft and round. Honey, ripe fruit and pale vanilla, with a touch of cinnamon and malt. There are no edges here — it is built to go down easily.

    The distillery sits on the Highland boundary itself. The pot stills stand in the Highlands while the casks mature across the road in the Lowlands — same address, two regions.

    The expert's description

    Glengoyne 12 Year is a Single Highland Malt Scotch Whisky matured in a combination of first fill bourbon and sherry casks along with refill casks, bottled at 43%.

    Around forty percent of the casks are first fill and the rest are refill. That balance gives the whisky more weight than the ten year old without making it heavy, and the 43% gives it a little more body in the glass.

    The malt is unpeated like the rest of the range. Without smoke it is citrus peel, coconut and sherry that carry the flavour, making this one of the more fruity twelve year olds from the Highlands.

    Lemon zest, coconut and shortbread with toffee apple. Sherry, ginger and vanilla behind it.

    On the banks of the Pitilie Burn, where people still crouch down and wash the gravel looking for gold, sits a distillery that has been making honeyed malt since 1898. Aberfeldy calls its whisky the Golden Dram. The colour is only half of what they mean.

    Aberfeldy 12 Year Old is a Highland Single Malt Scotch Whisky matured in American oak ex-bourbon casks alongside refill, re-char and sherry casks, bottled at 40%. It anchors the core range and is almost always the first Aberfeldy anyone tastes.

    The distillery stands in Perthshire, just outside the town of Aberfeldy. John Alexander and Tommy Dewar started building it in 1896, barely a few kilometres from where their father was born, and spirit was running by 1898. The plan was never modest: Aberfeldy would supply the heart malt for the blends that John Dewar & Sons built its name on. That job never went away, which is why it took surprisingly long for the single malt to get proper attention in its own right.

    The barley malt is unpeated, so there is no smoke here at all. The spirit runs through two wash stills and two spirit stills, double distilled, then spends twelve years in wood. American oak from the bourbon industry supplies vanilla, coconut and the pale honey note Aberfeldy is known for. The sherry casks lay dried fruit and a little spice over the top. Re-char casks are older casks burnt out again on the inside, and they pull the sweetness back up without making the whisky heavy.

    Nose

    Pale heather honey and vanilla arrive first, then peeled green apple and pear. Behind that sits a dry toasted note, roughly like toast pulled a moment before it turns too dark, and a lift of orange peel.

    Palate

    Soft and round without going slack. Honey and malt carry the whole thing, orange and pear keep it fresh, and a light cinnamon spice arrives in the second half. At 40% it is mild, but it is not thin.

    Finish

    Medium length. The honey hangs on, the spice ebbs away slowly, and a dry malty note is the last thing left.

    Ardmore 2008/2015 Signatory Vintage 7 Years Old is a Highland Single Malt Scotch Whisky matured in a Bourbon Barrel and bottled at 40%. Cask 800083 was distilled in 2008 and bottled in 2015 as a single cask for Vinmonopolet, giving 357 bottles.

    The combination is unusual: a single cask at 40%. Most single cask releases go into the bottle at cask strength, but here the whisky has been reduced to standard strength. In return it is neither chill filtered nor coloured, which at 40% requires a cask with real body behind it.

    Ardmore makes peated whisky as its core style at around 12 to 14 ppm. After seven years in a bourbon barrel the smoke is still fresh and direct, with the cask’s vanilla and cereal standing clearly alongside.

    Vanilla and pale malt first, with peat smoke as a dry line underneath. There is honey and green apple in it, plus a light soot or ash note that tells you peat is in play.
