Aberlour 12 Years Old Double Cask Matured is a Single Speyside Malt Scotch Whisky matured in traditional oak casks and Oloroso sherry casks, bottled at 40%. The name says it: the whisky has rested in two different cask types, and the interplay between them is what the whole release is built on.

Aberlour's new make carries a distinctive crisp citrus character, and the sherry casks are there to complement rather than drown it. The bourbon and oak casks hold on to that freshness and a clear malt sweetness, while the Oloroso casks lay in raisins, orange and a soft spiced depth. The balance sits closer to Christmas cake than to a sherry bomb.

The distillery was founded in 1879 by the grain merchant James Fleming in the village of Aberlour, where the Lour Burn meets the River Spey. Every oak cask is chosen by the team behind the whisky, and the sherry casks are nosed through before they are filled.

Nose

Orange peel and honey first, over a clear malty floor. The sherry arrives as raisins and a streak of cinnamon, and a light nuttiness with a hint of soft caramel sits further back.

Palate

Soft and round from the first sip. Baked apples, malt and orange marmalade open, then dried fruit and a mild spiced warmth from the sherry casks. The 40% makes it easy to drink, yet there is still a decent layer of fruit to follow.

High up in the Laphroaig warehouses, summer air gets warm and heavy under the roof. That's where Select spends its final months, in brand new oak, while the Atlantic knocks against the wall below. The smoke hasn't gone anywhere. It's just learned to speak a little softer.

Laphroaig Select is an Islay Single Malt Scotch Whisky matured in oloroso sherry casks, PX sherry casks and 1st fill bourbon quarter casks, finished in virgin American oak and bottled at 40%.

It arrived in May 2014 as a permanent part of the Laphroaig range. There's no age statement, and that was never the point. The distillery calls it their most approachable whisky, built for people who want to get into Laphroaig without being knocked flat by the first sip. In some markets it's sold as Laphroaig Oak Select.

The spirit is the same one that runs through the rest of the family. Peated malt, part of it still turned by hand on the distillery's own malting floors and dried over Islay peat, then double distilled. After that, the cask work starts. Spirit from oloroso sherry casks brings dried fruit and nuttiness. The PX sherry casks add a darker, stickier sweetness. Small quarter casks that once held bourbon give a lot of wood in a short time and pull out vanilla and coconut.

Finally everything is married together and rests for around six months in brand new American oak. You don't see virgin wood very often in Scotch whisky. It adds spice and a broad vanilla sweetness, and it rounds off the medicinal edge. The whisky has no added colour and took gold at the San Francisco World Spirits Competition in both 2020 and 2022.

Tasting Notes

Nose

Peat smoke is right there at the door. Close behind come ripe red berries, a bit of chocolate milk and a sharp lemon note, a lot like sherbet lemons from the sweet shop.

Palate

Sweet to begin with, almost soft. Vanilla, ginger and tart green apple, then the smoke moves in with ash and seaweed. Nutmeg and cinnamon smoulder underneath.

Finish

Long and surprisingly floral. Marzipan and lime linger, and right at the end the medicinal note comes back with a touch of damp oak.

Pour a glass and it smells like someone left the spice rack open next to a warm oven. Clove, ginger, a little cinnamon. The Spice Tree is the whisky that once got pulled off the shelves, fought its way back with a cleverer cask, and has now quietly become a piece of modern Scotch history.

Compass Box The Spice Tree is a Blended Malt Scotch Whisky matured in 1st fill bourbon barrels and custom hybrid casks fitted with new, toasted French oak heads, bottled at 46%.

American John Glaser left his job as marketing director at Johnnie Walker and founded Compass Box in 2000. The company owns no distillery. Instead it buys malt from Scottish distilleries and marries it together, and Glaser always preferred the word whiskymaker to blender. As a Blended Malt Whisky, The Spice Tree contains nothing but malt whisky made from malted barley, sourced from several distilleries. No grain whisky at all.

The first release arrived in 2005. To draw more spice from the wood, Compass Box had placed flat French oak staves inside the casks. The Scotch Whisky Association decided that broke the rules on how Scotch may be matured and threatened legal action, so production stopped. A few years later it returned in hybrid casks developed with coopers in France and Scotland: American oak bodies with heads of new French oak from the Vosges forests. Nobody could object to that.

The recipe is more intricate than the label lets on. In batches bottled from March 2021 onwards, just under three quarters of the whisky is a proprietary Highland Malt Blend, split across hybrid casks with three different toast levels. Heavy toast brings dark chocolate, cinnamon and clove, medium toast rich vanilla and caramel, light toast toffee, honey and spiced apple. The rest is Glen Moray and Balmenach from 1st fill bourbon barrels, adding perfumed apple, honey and a waxy fruitiness underneath. The Highland Malt Blend itself is roughly 60% Glen Moray, 25% Tomatin and 15% Balmenach. Earlier batches were built on Clynelish, Teaninich and Dailuaine.

In summer 2024 Compass Box retired both The Spice Tree and The Story of the Spaniard from its core range, making room for Crimson Casks. What remains on the market is residual stock. The whisky is non-chill filtered and has natural colour.

Tasting notes

Nose

Clove and fresh ginger up front, followed by cinnamon and nutmeg over a soft layer of vanilla. Ripe apple and a touch of honey sit further back.

Palate

Full, round and sweet. The French oak spice wraps itself around a fruity malt core, with vanilla close behind. Gingernut biscuits, toffee and a peppery warmth across the middle of the tongue.

Finish

Long and spicy with toasted oak. Honeycomb and a hint of nectarine and plum linger while the pepper slowly fades.

BenRiach Heart of Speyside is a Single Speyside Malt Whisky without an age statement, matured in oak casks and bottled at 40 %.

This is the younger of the two Heart of Speyside bottlings, the other carrying twelve years on the label. Without an age statement the distillery had a freer hand to assemble casks by taste rather than by number, which gave a profile held steady across the life of the range.

The range belonged to the period under Billy Walker, who bought BenRiach in 2004 and turned the distillery into a brand in its own right after decades of mainly supplying malt to blends. Heart of Speyside was phased out after the 2016 change of ownership.

Pale cereal, honey and apple with a suggestion of vanilla. Simple and easy to read.

The Hive is a Blended Malt Scotch Whisky bottled at 46% ABV by Wemyss Malts, assembled from selected casks sourced from several Scottish distilleries.

Wemyss Malts runs its business on a philosophy borrowed from the wine trade: the family acts as a negociant, seeking out the finest single casks from across Scotland, which are then tasted and selected by a nosing panel chaired by whisky writer Charlie Maclean. The casks are not named after the distillery but after their characteristic flavour profile, which is how The Hive name became synonymous with a soft, honeyed style.

This "Old version" represents an earlier chapter in The Hive's history, carrying a label design different from what is found on today's shelves.

Deanston 17 years Old Version is a Highland Single Malt Scotch Whisky bottled at 40%.

The release predates Deanston moving its core range to 46.3% without chill filtration and without added colouring. Seventeen years in cask is uncommon even today, and when this was bottled it was among the house's oldest releases. Deanston has distilled since the mid-1960s in a converted cotton mill by the River Teith, and the long maturations show a different side from the core range.

Tall and slim instead of low and broad. The bottle shape alone says this 105 comes from another time — today’s release arrives in a short, squat bottle, while the older ones were filled into tall bottles.

Glenfarclas 105 Old Version is a Speyside Single Malt Scotch Whisky bottled at cask strength 60% in a 75 cl bottle.

The bottling appears to date from the 1980s. The 75 cl was the European standard until 70 cl took over in the early 1990s, and the tall bottle shape was later replaced by the low, broad one Glenfarclas uses today. The whisky carries the white band around the neck.

The contents follow the same idea as the current 105 — sherry-matured Glenfarclas at full strength with no age statement. But spirit from the 1970s and 80s has a reputation for being heavier and oilier than what is made today, and for many collectors that is exactly why the older bottles are interesting.

Nose

Complex and oaky, with apples, pears and a sweet, dark toffee. There is a dusty depth that older bottles often develop.

Palate

Dry and assertive. It develops quickly to reveal a rich spiciness combined with a hint of oak and sherried fruit. At 60% there is a lot at once, but it is warming rather than sharp.

Finish

Amazingly smooth for the strength. Warming and with a lingering smokiness, yet gathered and round.

Glenfarclas runs six pot stills, the largest in Speyside, and they are fired directly with gas rather than heated by steam. It is an approach almost every other distillery has abandoned, and it produces a heavier spirit.

Dallas Dhu stopped production in 1983 and was never demolished. The distillery stands today as a museum with all the equipment in place — but without a drop of new spirit since the Thatcher years.

The series was launched in 1991 by United Distillers, today Diageo, and gathered 26 different single malts from distilleries that otherwise supplied only blends. The aim was to show the differences between Scotland's whisky regions. Most were bottled at 43%, while a few appeared at cask strength or in wooden boxes.

Blair Athol in Pitlochry has been the spirit's home since 1798. The style is heavy and nutty with a syrupy sweetness that makes the whisky recognisable among the other Highland malts in the series.

Tasting notes

Nose

Malty sweetness with raisin, brown sugar and a nutty, almost meaty note underneath.

Palate

Full and syrupy with dried fruit, dark sugar and a stroke of spice. There is real weight through the middle.

Finish

Medium and dry with nuts, malt and a lightly bitter oak note.

Medium. The Flora & Fauna series has become a collecting field in itself, and several releases have already been discontinued. Demand has risen as the series has been cut back.

The animal on the label is not chosen at random. Every bottle in the series shows an animal or plant from the area around the distillery, and Blair Athol's otter refers to the Allt Dour spring, the otter's burn.
