    Ardlair is not a distillery. It is a name Ardmore uses when the smoke stays at home, the unpeated half of the house, named after a stone circle out in the surrounding landscape. Here it has spent eleven years in a sherry cask at 62.5%.

    The Expert's Description

    Ardlair 2011/2023 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in a refill Oloroso Sherry Butt and bottled at 62.5% cask strength. Cask 900032 was distilled on 27 January 2011 and bottled on 11 January 2023 in Signatory's Cask Strength Collection, giving 597 bottles.

    Ardmore is one of the few Highland distilleries with peat smoke as a core style, and Ardlair is the name given to the unpeated production. Without the smoke the spirit’s own fruitiness and malt sweetness step forward more clearly, which makes the whisky far more receptive to a sherry cask.

    That the cask is refill rather than first fill matters here. A refill Oloroso Butt gives up less colour and less tannin, so the sherry settles as a layer on top instead of taking over. The whisky is bottled without filtration and without added colour.

    Tasting Notes

    Nose

    Raisins and figs first, with roasted nuts and honey behind. There is dried ginger and spice in it, and beneath the sherry sits a bright apple fruitiness that tells you the spirit is unpeated.

    Palate

    Dark chocolate and walnut open, followed by sweet sherry and spiced oak. The vanilla arrives late. At 62.5% the concentration is considerable, and the whisky takes water well, turning rounder rather than thinner.

    Finish

    Long and warming with persistent sherry sweetness and elegant oak tannins that let go slowly.

    Annandale Rascally New Make Peaty Malt Spirit is the distillery's peated new make spirit, drawn straight after distillation without cask maturation, bottled at 63.5%. 'Rascally Liquor' is the name of Annandale's new make spirit, named after a quote by the Scottish poet Robert Burns, who described whisky as exactly that — 'rascally liquor'. It was first launched on Burns Night in 2015. Annandale Distillery was founded in 1836 as one of Scotland's first legal distilleries, but closed in 1918 while owned by none other than Johnnie Walker. The distillery lay derelict for nearly a century, until Professor David Thomson and Teresa Church read about it in the book 'Scotch Missed: Lost Distilleries of Scotland', tracked down the ruined building, bought the site in 2007 and reopened the distillery in 2014 after extensive restoration. The distillery produces two main expressions: the unpeated Man O'Words and the peated Man O'Sword, continuing the distillery's historic tradition of smoky whisky.

    Croftengea Lennox Peat 2018/2022 is a Highland Single Malt Scotch Whisky matured in oak casks and bottled at 46%.

    The whisky was distilled in 2018 under Loch Lomond's heavily peated Croftengea profile and, after four years of maturation, was bottled by independent bottler Murray McDavid in 2022 under the name "Lennox Peat" – named after the historic term for the land surrounding the loch. Murray McDavid always bottles at a minimum of 46% with no added colouring or chill filtration.

    The label looks like something lifted from an old pharmacy, and that is deliberate. Elixir Distillers built the whole range around the idea of Islay as an element you could extract and bottle in its pure form.

    Elements of Islay Bourbon Cask is a Blended Islay Malt Scotch Whisky matured in 1st fill and refill bourbon barrels and bottled at 54.5%.

    The range began in 2008 with small apothecary bottles and a code in place of a distillery name. Bourbon Cask is one of the core releases and brings together malt from several Islay distilleries, where the heavy barbecue smoke of the south coast meets the lighter, zestier style of the north. Elixir Distillers does not disclose which distilleries are involved.

    The bourbon wood was chosen because it lets the smoke stand clearly in front. Where a sherry cask would lay dark fruit over the top, American oak contributes vanilla and coconut that push the peat forward instead of covering it. The whisky is neither chill filtered nor coloured, and the 54.5% was chosen to give it full weight.

    Tasting notes

    Nose

    Sugar and vanilla pod first, then tropical fruit, mango and pineapple, and behind it a thin ribbon of chimney smoke drifting in and out.

    Palate

    Cappuccino dusted with cocoa, warm vanilla brioche and fruit poached in maple syrup, while a peat fire builds underneath it all.

    Finish

    Long and sooty with salt, lemon peel and a dry ash note that stays well after the sweetness has gone.

    No two Traigh Bhan batches are alike, and Batch 4 stands out with a silkier character thanks to a higher share of first-fill bourbon casks working alongside the sherry casks. Every batch carries its own batch number and the signature of one of the distillery's well-known faces, in this case Colin Gordon.

    Nose

    Faint hints of sweet smoky wood and crème fraîche develop into bold notes of fennel, celery and toasted tea.

    Palate

    A salty mouthfeel turns into soft herbal notes, followed by salted peanuts, smoked pineapple and lime juice, as waves of aniseed roll across the palate.

    Finish

    An intense finish of caramel and smoke breaks through after the milder middle notes.

    The cask came from Laphroaig on Islay. The whisky came from Ardmore in Aberdeenshire. Two peated houses from opposite ends of Scotland shared the same wood, and the result was 194 bottles, released for the Danish market alone.

    The Expert's Description

    Ardmore 2009/2022 Adelphi Selection 12 Years Old is a Highland Single Malt Scotch Whisky matured in a used bourbon cask from Laphroaig and bottled at 58.6% cask strength. Cask 709300 was distilled on 16 December 2009 and bottled on 11 October 2022, giving 194 bottles for FC Whisky in Denmark.

    An ex-Laphroaig cask is not neutral. Laphroaig is one of the most heavily peated whiskies in Scotland, and phenols from the previous filling remain in the staves. Put Ardmore’s own peated malt into that cask and you get two kinds of smoke that are not alike: Ardmore’s dry earthy Highland smoke and a saltier, more medicinal undercurrent from Islay.

    Adelphi is known for a very strict selection, where only a small fraction of the casks the house tastes make it through. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Peat smoke and salt first, with tar and a suggestion of iodine behind, the Laphroaig inheritance is obvious. Vanilla, honey and toasted malt from the bourbon wood sit underneath.

    Palate

    Powerful and oily. Smoke and salt open, then honey, vanilla and a dry peppery spice. The 58.6% pushes hard, but there is body enough to carry it. A few drops of water draw out the sweetness and calm the salt.

    Finish

    Long and dry. Ash, salt and spiced oak, with a final malt sweetness lingering beneath the smoke.

    Bivrost Helheim Arctic Single Malt Norwegian Whisky is part of the distillery's series named after the Nine Realms of Old Norse mythology, bottled at 46%. Bivrost is distilled at Aurora Spirit Distillery in Lyngen, northern Norway, 69 degrees north of the equator, making it one of the world's northernmost distilleries. Construction began in 2016, and the name Bivrost comes from Old Norse mythology, where it denotes the rainbow bridge between heaven and earth — a nod to the Northern Lights often seen above the distillery. Local botanicals and glacial meltwater are used in production.

    Lagg Distillery Inaugural Release 2022 Batch 1 is a Single Island Malt Whisky, bottled at 50%. Lagg is the second distillery on the Isle of Arran, built by Isle of Arran Distillers near the site where the island's last legal distillery closed in 1837. Construction was completed in 2019, with the first spirit run that March and the official public opening in June 2019. Unlike sister distillery Lochranza, which makes unpeated whisky, Lagg focuses exclusively on peated whisky, using barley with a phenol content of 50ppm. This first release, only 10,000 bottles, spent 3 years maturing in bourbon casks.

    The barley is 100% Concerto, grown on Octomore Farm itself and peated to 129.3 ppm. The whisky is matured for five years in a combination of first-fill European oak casks from Rivesaltes in France and Ribera del Duero in Spain, along with first-fill American whiskey casks.

    The combination of terroir-driven barley and three different cask types gives 13.3 a more rounded fruitiness than many other Octomore editions, without compromising on the peat.

    Nose

    Lemon and orange peel meet a subdued, ash-free smoke, with malted grain notes beneath the fruit.

    Three weeks before cask number 130 was filled, this cask, number 102, was laid to rest in the same warehouse. Ten years later the two neighbouring casks were bottled on the same day — but they taste far from identical.

    Kilchoman 2007/2017 Kolding Whiskylaug is an Islay Single Malt Scotch Whisky, 10 years old from a single bourbon cask and bottled at 55.1 %.

    The whisky was distilled on 16 May 2007 and bottled on 25 August 2017 from cask number 102. Like its companion cask 130, it was selected exclusively for Kolding Whiskylaug af 1999, but this time with only 240 numbered bottles in total.

    The small difference in strength, 55.1 % against cask 130's 55 %, is a small testament to how differently two casks from the same warehouse can develop over ten years of maturation — a reminder of why single cask whisky can never be repeated.

    Powerful peat notes meet dried fruit and sea salt, with a touch more spice than its companion cask.
