    The whiskey was created in partnership between Danish rock band Volbeat and Great Northern Distillery in Dundalk, County Louth. Michael Poulsen, the band's frontman, travelled to the distillery himself to help construct the blend, reflecting the band's love of both music and strong spirits. The bottle's design and branding draw on the band's outlaw aesthetic and musical heritage.

    Holyrood Brewers Series NM03 Chocolate Malt New Make is an unaged new make spirit made from chocolate malt, drawn straight after distillation, bottled at 60%. Holyrood Distillery opened in 2019 as the first single malt distillery in central Edinburgh since 1925. The distillery was founded by Canadian couple Rob and Kelly Carpenter along with former Macallan master distiller David Robertson, and is housed in a renovated 'engine shed' that was once part of the Innocent Railway terminus. The distillery is known for experimenting with yeast strains sourced from the city's breweries.

    Glen Scotia Harbour Classic is a lightly peated Campbeltown Single Malt Scotch Whisky matured in 1st fill bourbon casks and bottled at 40%.

    The bottling works as the entry point to the distillery range. 1st fill bourbon casks lay vanilla and bright fruit in, and the light peating gives a smoke note that sits as a breath rather than a layer. The 40% makes the whisky easy to drink, but it also makes it less concentrated than the rest of the line-up.

    Glen Scotia is a small distillery with only one pair of pot stills. Capacity is modest by modern standards, so the entire output has to cover the standard range, the festival bottles and the casks sold on to independent bottlers.

    Nose

    Briny sea spray and sea breeze first, with floral violet notes and soft vanilla behind.

The name draws on Y Ddraig Goch, the red dragon on the Welsh flag, and the myths that surround it — and the whisky itself is just as fable-like in character: sweet, fruity and surprisingly light on its feet.

    It belongs to Penderyn's Dragon range, relaunched in new packaging in 2021, and it's distilled on the same single Faraday still that sets Penderyn apart from most of the world's distilleries — a column still designed by a relative of the physicist Michael Faraday. The result is a spirit of unusual purity that leaves the casks plenty of room to do their work.

    On Hven, a speck of land in the Öresund strait where nothing is ever quite ordinary, a corn whisky broke a few local rules the moment it appeared. MerCurious borrows its name from the quicksilver planet, and it distils almost pure Swedish corn into something closer to bourbon than to any Nordic single malt you have tried.

    Spirit of Hven MerCurious is a Swedish Corn Whisky matured in new, air-dried American oak casks and bottled at 45.6%.

    Behind the bottle stands Henric Molin, the distillery's restless distiller, who built MerCurious as a nod to the American bourbon tradition, using purely Swedish grain as its base. The recipe runs 88 percent corn, topped up with wheat, barley and rye, and every batch is drawn from fourteen casks of air-dried American virgin oak. Depending on each cask's character, the whisky matures for three to eight years before it is blended and bottled.

    The idea for Spirit of Hven took shape when Anja and Henric Molin realised this small island in the Öresund had almost everything a distillery could ask for: nutrient-rich soil, a mild microclimate and a position squarely between two countries. The distillery opened in 2008, and MerCurious has become one of its most personal expressions, a corn spirit that insists on doing things its own way.

    Tasting notes

    Nose

    Light, sweet aromas of caramel and ripe apple lead, spiced with a touch of lingonberry. Underneath sits a sweet note reminiscent of freshly baked cornbread.

    Palate

    The whisky opens almost sparkling and fresh before rounding out into a fuller, sweeter register of vanilla and cocoa. The corn stays clearly present, close to leaning over a pot of just-boiled sweetcorn, balanced by a light tartness that recalls a warm fruit pie.

    Finish

    Soft and warm, closing on a last trace of sugar-cane syrup and toasted oak.

    Auchroisk Murray McDavid Cask Craft Batch 2 is a Single Speyside Malt Scotch Whisky finished in a Koval quarter cask and bottled at 44.5%. It is neither chill filtered nor coloured.

    A quarter cask holds around 125 litres, half a hogshead, and therefore has markedly more wood contact per litre. The finishing works quickly, and that is the whole idea behind the range: to give a young whisky a clear imprint in a short time.

    Koval in Chicago distils from unconventional grains such as millet and oats, and their casks carry the mark of it. Auchroisk was built in 1974 for the J&B blend, and the distillery’s bright style takes well to that kind of cask.

    Nose

    Sweetness and spice first. Vanilla and honey sit beneath a clear oak note, and there is a lightly nutty, cereal character from the American cask.

    A little pig grins out from the label, and the name is a play on the classic hogshead cask, the roughly 200-litre barrels whisky matures in right across Scotland. Behind the playful front sits a blend that never reveals where it comes from, yet speaks for itself in the glass.

    Hogshead Fine Old Blended Malt Scotch Whisky is a Blended Malt Scotch Whisky with no age statement and no disclosed distilleries, bottled at 43%.

    The whisky is composed entirely of malt whisky from several Scottish distilleries, a large share of which is thought to come from Islay, rounded out with a gentler base likely from the Highlands or Speyside. Neither the source distilleries nor the bottling company are named on the bottle, which is common for this type of accessible blend that relies on its flavour rather than its pedigree.

    In the glass the colour is light amber, and the style is considerably milder than the name and the presumed Islay component might suggest. This is a whisky built to be broad and welcoming rather than uncompromising.

    Tasting notes

    Nose

    Fresh oranges and a touch of black pepper meet gentle smoke and mint, with a faint yeasty note underneath.

    Palate

    Soft, sweet smoke moves into sherry sweetness and fruit candy, with a small maritime whisper in the background.

    Finish

    Medium length, with grapes, sweet liquorice and dark bread, before a light fruit acidity lingers as the last impression.
