    Cragganmore 12 years is a Speyside Single Malt Scotch Whisky matured in ex-bourbon casks and bottled at 40%.

    The distillery was founded in 1869 by John Smith at Ballindalloch and still draws water from the Craggan Burn alongside it. The unusual part is the equipment: the pot stills have short, flat-topped necks, and condensing happens in worm tubs rather than modern shell-and-tube condensers. Both give less copper contact, and the result is a heavier, more layered spirit. The 12 year old is the core expression and Speyside's seat in Diageo's Classic Malts range.

    Nose

    Sweet herbs and meadow flowers, honey and vanilla. Behind them sit a dry malted cereal note and a trace of resin.

    Palate

    Strongly malted for a 40% whisky. Honey, poached apple and sandalwood, with a suggestion of sweet wood smoke arriving mid-palate.

    Finish

    Long and malty with sweet hints and a mild herbal dryness at the close.

Weller at the Stitzel distillery. The Van Winkle family owned the brand until 2000, when it was acquired by Luxco.

    Deanston Virgin Oak is a Highland Single Malt Scotch Whisky matured in traditional oak casks with a final maturation in new American oak casks and bottled at 46.3% without chill filtration and without added colouring.

    The whisky builds on Deanston's pale, fruity and naturally honeyed house style and then takes a lift of spice and vanilla sweetness from the untreated wood. Deanston has distilled since 1966 in a converted cotton mill by the River Teith, which also drives the distillery's hydroelectric plant. The house uses no peat at all, so all the warmth in the whisky comes from the casks.

    At 40% this is the softest end of the range. That makes it a sensible way to meet Islay for the first time, and a bottle you can keep on the shelf without having to be in the mood for it.

    Soft peat smoke and vanilla, with a lightly salted edge and a note of dried citrus peel behind.

    Palate

    Behind the bottle stand Islay Boys, founded by Mackay Smith and Donald MacKenzie from the Rhinns peninsula on Islay. MacKenzie learned whisky production from Jim McEwan at Bruichladdich, and the firm has since built a set of brands around Norse island history.

    This release is a blended malt, meaning malt whisky from several distilleries and not a drop of grain. The smoke is restrained and sits as an edge rather than as the main course, and 46% gives it body without making it hard. It is bottled without chill filtration in small batch, which means the contents can vary a little from run to run.

    The base whisky is the same light, peated blend from Islay Boys that the rest of the Flatnöse family is built on. The difference lies in the closing period in rum wood, which among other things has contributed exotic demerara notes, the dark, almost molasses-like sweetness familiar from rum made on cane syrup.

    The rum cask makes the whisky softer and rounder without the smoke disappearing. It is bottled without chill filtration in small batch, so the contents can vary a little from run to run.

    Glen Elgin Murray McDavid Craft Cask Peated Finish is a Speyside Single Malt Scotch Whisky matured in a bourbon cask and finished in a bourbon cask from Islay, bottled at 44.5%.

    The release belongs to Cask Craft, the Murray McDavid range where the wood is the entire starting point. The series is put together by the house Head of Whisky Creations, Dean Jode, and this edition carries the subtitle Smoke & Citrus.

    The method is simple and effective. The whisky sits first in an ordinary bourbon cask and is then moved into a bourbon cask that previously held peated Islay malt. The cask gives up the peat smoke it has absorbed, and the result is a Speyside fruitiness with a smoky edge it would never have had on its own. The whisky is bottled in natural colour as batch number PEAT-01.

    Tasting notes

    Nose

    Citrus peel and ripe pear first, then a dry smoke note that creeps in, and vanilla beneath it all.

    Palate

    The name comes from the two cask types. The bourbon casks lay vanilla and bright fruit into the spirit, and the PX casks add the dark, syrupy sweetness that Pedro Ximénez sherry is known for. The order means the sweetness comes last and settles as a layer over the salt rather than soaking through it. There is no age statement, which gives the blender freedom to build the batch by taste rather than by year.

    Thomas Rydberg of Whisky & Rom Magasinet awarded the bottling 90 points. That is a high score for a whisky with no age statement, and it says something about the Glen Scotia spirit having enough body to manage without many years of cask time behind it.

    The permanent range begins at ten years, so an eight year old is the youngest release the distillery sends out. The sherry is still there, but it is lighter and more fruit-driven, and at 40% the whisky is easy to approach without being thin. The apple and cinnamon come from the spirit rather than from the cask.

    Glenfarclas came into the Grant family by chance. John Grant was a cattle breeder whose fields lay next to the distillery land, and when the neighbour wanted to sell in 1865 it was the natural move. The family has held it ever since.
