    Not a single cask is involved here. Only a long, wild fermentation in the humid heat of Trelawny, a copper pot still, and a spirit that goes into the bottle without a drop of colouring. Open it and the aroma has filled the room before the glass is poured.

    Hampden Estate Rum Fire Jamaican White Overproof Rum 70 cl 63% is an unaged Jamaican White Overproof Rum distilled from molasses in a pot still and bottled at 63%.

    Hampden Estate sits in Trelawny on the north coast of Jamaica, a short way from Falmouth, and rum has been made on the estate since 1753. The distillery is known for its high ester style, meaning the aroma compounds that give Jamaican rum its penetrating character of overripe fruit and varnish. Fermentation runs for weeks rather than days, it is started by wild yeast instead of a cultured strain, and it is fed with dunder and acidified organic matter from the estate's own pits.

    Rum Fire is the distillery's unaged bottling and the most direct route into that character. It is clear because it has never seen the inside of a cask, and nothing has been added, neither sugar nor colouring. The 63% is not a stunt but the strength the style asks for, carrying the aromatics all the way through a drink instead of drowning in ice and lime.

    Behind a bar it is a tool. A Daiquiri built on Rum Fire tastes nothing like one built on a light white rum: pineapple, banana and a saline edge, and it stays put. A small measure goes a long way.

    Tasting notes

    Nose

    Overripe banana and pineapple arrive at once, closely followed by something like varnish and freshly cut timber. Underneath sits a saline note, close to olives in brine.

    Palate

    Oily and huge. Tropical fruit first, then a peppery warmth spreading out, and a mineral, almost chalky base. The alcohol is obvious, yet it carries rather than burns.

    Finish

    Long and warm with the fruit hanging on. A dry, salty tone closes it out and keeps reminding you where it came from.

    The set contains Rum4u Jamaica Dok 2022 Single Cask Rum 50 cl 79% and Rum4u Jamaica Dok Miniature Unaged Distillate 5 cl 80%. The large bottle is matured rum with six extra months in a used Madeira cask, the small one is the spirit in its raw state. It is rare to taste a Jamaican high ester rum before and after the cask in one sitting.

    DOK is an ester mark from Hampden Estate in Trelawny, Jamaica, and it sits at the top of the distillery's scale. This bottling is marked 1500-1600 g/hLAA esters, meaning ester content per hectolitre of pure alcohol. For comparison, most light rum styles sit well below 100. Esters are what gave the Jamaican style its reputation: banana skin, glue, lacquer and overripe pineapple, at a volume that cannot be ignored.

    Rum4u is a Danish rum importer run by Lasse, Kim and Brian, who buy single casks and bottle them themselves. This cask carries the number 1.1-22 and produced 79 bottles, which happens to match the strength. The Madeira cask was chosen as a counterweight: it lays dried fruit and a tart sweetness beneath the esters without muting them.

    Tasting notes

    Nose

    Ferocious from the first second. Banana skin, acetone, brined olive and overripe pineapple, with tar and old timber underneath. The miniature is even more direct, sour and green, while the matured version has picked up raisin and fig from the Madeira cask.

    Palate

    With water in the glass it spreads out: fermented fruit, brine, black pepper and an oily texture that clings to the tongue. Neat, it is mostly the strength doing the talking. The Madeira runs through the middle as a dry, tart stripe of fruit and keeps the esters from reading as pure solvent.

    Finish

    Very long. Liquorice root, burnt sugar and a saline, almost mineral edge that stays for minutes. The mouth feels warm long afterwards, and the finish shifts character every time you come back to the glass.

With no leftover whisky or bourbon character in the wood, what's left in the glass is the raw interaction between rum and fresh oak, and Spanish oak tends to bring more spice and structure to the table than its American counterpart.

    Worthy Park is today one of only two fully Jamaican-owned rum distilleries left on the island, run by the Clarke family since 1918.     The rum comes from Worthy Park Estate, located 1,200 feet above sea level in the hills of Lluidas Vale, and is released by the Italian bottler Habitation Velier under its philosophy of rum without added sugar, colour or flavour. WPM is the second most concentrated of Worthy Park's ester marques, reaching levels up to 209.3 grams of esters per hectolitre of pure alcohol, giving it a bold, empyreumatic character. This bottle is assembled from 25 fully matured American oak casks and was distilled in 2006, before being bottled in 2017 after 11 years in cask.

    The rum is a blend of coffey still distillate from Foursquare Distillery in Barbados, pot still distillate from the same distillery matured 2 years in ex-bourbon casks, and unaged pot still distillate from Hampden Estate in Jamaica. All three components are distilled, matured, blended and bottled in the Caribbean with no added sugar, flavouring or neutral spirit, making Veritas a white rum with real character rather than a neutral base spirit.

    Nose

    Fresh with ice cream soda sweetness and a clean, grassy undertone, plus buttercream, banana cream, golden apples and dried pineapple.

    Palate

    Fresh and intensely fruity with whipped cream underneath, freshly sliced pineapple, overripe bananas and pears, combined with a hint of liquorice and spiced wood.

    Finish

    Worthy Park 12 Year is a Single Estate Rum from Jamaica, 12 years old, distilled in a 100% copper pot still and aged first on ex-bourbon casks followed by maturation on ex-Calvados casks, bottled at 50%.

    The rum is pot-still distilled on Worthy Park's 100% copper still, giving a full-bodied, characterful distillate. It is first aged on ex-bourbon casks before being moved onto ex-Calvados casks - French apple brandy casks - which add a different fruit note to the powerful, ester-rich Jamaican base. The bottle is non-chill filtered and contains no sugar or other additives, just pure Jamaican rum. It is a limited release.

    Worthy Park Estate is known for having some of the highest ester levels in Jamaica, giving their rum a marked, intense fruitiness.
