    Some smoky whiskies demand that you take a position immediately. Cask Edit is not one of them. It beds the smoke down in something soft and lets you decide how far into it you want to go.

    Elements of Islay Cask Edit is an Islay Blended Malt Scotch Whisky matured in bourbon and sherry casks and bottled at 46%.

    Where the rest of the range splits by cask type, bourbon on one side and sherry on the other, Cask Edit is where the two meet. Elixir Distillers has built it from smoky malts drawn from several Islay distilleries and let both American oak and sherry wood leave their mark. The bourbon casks give vanilla and body, the sherry casks sweetness and dark fruit, and the smoke runs through all of it without taking charge.

    The result is the most approachable release in the range and a sensible place to begin if Islay is still unfamiliar ground. The 46% is chosen so the whisky has enough body to take a drop of water, and it is neither chill filtered nor coloured.

    Tasting notes

    Nose

    Soft peat smoke and sea spray, a light mineral edge, and vanilla, citrus and pale fruit behind it.

    Palate

    Well balanced. Smoke and ash meet caramel, candied fruit and malt, with a discreet sherry sweetness as counterweight.

    Finish

    Medium length with smoke, oak and a mild spiced warmth.

    Peat smoke and oloroso are not an obvious pair. One wants to fill your mouth with ash and salt, the other with dried fruit and syrup. Elixir Distillers put them in the same bottle and let them work it out.

    Elements of Islay Sherry Cask is an Islay Blended Malt Scotch Whisky matured in 1st fill and refill sherry butts and hogsheads and bottled at 54.5%.

    The range divides Islay by cask type, and this is the dark end. Where Bourbon Cask leaves the smoke standing free with vanilla underneath, the sherry wood here lays down a layer of figs, dates and dark chocolate that the smoke then has to climb through. The result carries more weight and more spice than anything else in the range.

    The malt comes from several Islay distilleries and which ones is not disclosed. The 54.5% is chosen to hold both the smoke and the sherry together, and the whisky is neither chill filtered nor coloured.

    Nose

    Tobacco lingering in an emptied sandalwood cigar box, smoked fish, and above it lemon oil, fresh ginger root and a hint of menthol.

    Palate

    Smoky, phenolic and slightly medicinal. Figs and dates arrive first as the smoke builds, with honey, orange marmalade and citrus underneath as counterweight. Further in: dark chocolate around candied orange, crystallised stem ginger and muscovado syrup over a sticky ginger cake.

    Finish

    Long, with a gentle smoke that lingers alongside dried autumn fruit.

    The casks come from Bossuet Cooperage in France and all originate from the same cognac house — a detail that ensures a consistent, characterful cask influence across the whole release. The 300-litre casks previously held cognac, itself double distilled in copper pot stills and matured for a minimum of two years in French oak, typically Limousin, before being emptied and refilled with new-make Kilchoman spirit.

    The result builds on Kilchoman's classic house style — citrus-fresh peat smoke carried on Islay's coastal air — while adding an extra layer of dried fruit, caramel and warm spice from the cognac casks' history. It's a release that shows how much a single cask type can shift a whisky without it losing its identity.

    Nose

    Dried apricots and orange peel meet caramel and a hint of freshly brewed coffee, while the peat smoke sits as a calm undercurrent throughout.

    Crimson in the glass, black as peat smoke in spirit. Kilchoman played with fire when they filled new-make spirit into French Maury casks — sweet fortified wine from Roussillon against Islay's raw peat smoke. It could have gone wrong. It didn't.

    Kilchoman Maury Cask Matured is an Islay Single Malt Scotch Whisky, fully matured in French Maury fortified wine casks and bottled at 50 %.

    Maury is a naturally sweet fortified wine from Roussillon in southern France, made mainly from overripe Grenache Noir grapes — a cask type almost never seen in Scotch whisky. Kilchoman didn't just finish this whisky in Maury casks. The spirit spent its entire maturation in them, and that is the crucial difference: where a finish only adds a thin coat of flavour, the Maury casks here were allowed to work all the way through, pulling the whisky towards a dark, fruit-sweet character from day one.

    The release is part of the Uniquely Islay Series 2026 and is the distillery's first ever Maury bottling. It draws on a vatting of 19 casks filled in 2021, bottled at natural colour without chill filtration. The result is one of the darkest Kilchomans to date — almost blood red in the glass, which is highly unusual for an Islay Single Malt.

    Kilchoman is Scotland's only true farm distillery. They grow part of their own barley at Rockside Farm, floor malt it themselves, and complete every step from grain to bottle on the island. The citrus freshness that always lurks beneath Kilchoman's smoke is exactly what keeps the Maury sweetness here in check and stops it tipping into the jammy.

    Tasting notes

    Nose

    Dates, raisins and fig jam arrive first, followed by dark honey and syrup. Beneath the sweet, almost meaty fruit sits soft peat smoke, orange peel and a whisper of cocoa and dark cherries.

    Palate

    The Islay smoke steps in straight away. Pipe tobacco and dark chocolate lie over waves of syrup, stewed fruit and warm spice, while marmalade and liquorice appear midway and toasted oak gives structure.

    Finish

    Long and generous, with peat smoke wrapped in dark fruit and soft toffee. Finishes with a flick of orange peel and dry oak spice — sweet and dry at the same time.

    The bottle was released as a limited edition with a total of 9,600 bottles worldwide, one of the larger outputs in the Octomore family, yet still a sought-after release for peat lovers.
