    Caol Ila 2010/2021 Signatory Vintage 10 Year Old Islay Single Malt Scotch Whisky is an independent bottling from Signatory Vintage, distilled in 2010 and bottled in 2021 after 10 years of maturation, bottled at 43%. Caol Ila Distillery was founded in 1846 on the shore of the Sound of Islay, from which the distillery also takes its name — Gaelic for 'Sound of Islay'. The distillery is today owned by Diageo and is one of Islay's largest producers, although much of its output has traditionally gone into blended whisky such as Johnnie Walker. Despite its peated character, Caol Ila is often somewhat lighter and more elegant than several of Islay's other distilleries.

It was matured in a combination of refill Oloroso sherry butts and bourbon barrels, giving a whisky with both body and freshness.

    Aultmore was built in 1896 by Alexander Edward, and production started on 24 May 1897. The distillery sits by the Burn of Auchinderran north of Keith, a stream known locally as the Foggie Moss.

    John Dewar & Sons bought Aultmore in 1923 for £20,000, and since then by far the greater part of production has gone into Dewar’s White Label. Official single malts are therefore rare, and independent casks like this one are the usual way in.

    Nose

    Fresh and grassy. Apple and pear first, then vanilla, a light honeyed sweetness and a dry, mineral note typical of the distillery.

    Palate

    Clean and light. Apple and citrus open, then vanilla, a dry cereal note and a touch of pepper arrive. At 43% the body is fine, and the whisky stays fresh all the way.

    The blend follows The Antiquary's classic style of Highland and Speyside malt whisky married with Lowland grain whisky, and it is exactly this balance between malt and grain that lets the Claret casks leave such a clear mark.

    The Antiquary brand traces back to Victorian Edinburgh, where the Hardie brothers registered the name in 1888 after Sir Walter Scott's novel of the same title, and the brand now belongs to Tomatin Distillery Co.

    Ben Nevis 10 Glencoe is a Blended Malt Scotch Whisky matured in oak casks and bottled at 46 % without chill filtration.

    A blended malt consists purely of malt whisky from several distilleries, meaning no grain whisky at all. Glencoe is built on malt from the Ben Nevis distillery at the foot of the highest mountain in Scotland and is bottled with ten years as the guaranteed minimum age.

    The 46 % and the absence of chill filtration are chosen to keep the oils in the whisky. That gives a thicker texture and a more complex nose than an equivalent blended malt at 40 % would carry, and it is one reason the bottling has stayed in the range.

Lindores Abbey is regarded as the spiritual birthplace of whisky. Scotland's Exchequer Rolls of 1494 record that the monk Friar John Cor was issued eight bolls of malt by order of the King to make 'aqua vitae' — the earliest known written reference to Scotch whisky distillation, equivalent to around 400 bottles by today's standards. Lindores Abbey monastery was founded in 1191 on the banks of the River Tay, and in 2018 archaeologists found remains of a distillation vessel in the ruins. The modern distillery opened in 2017 right next to the historic abbey ruins.

    The label salutes the Barrowland Ballroom, the old dance hall in the East End of Glasgow whose neon stars above the entrance have lit the way for just about every band that ever passed through the city. The whisky inside is every bit as local, and about as loud.

    Glasgow Distillery 2017 Little Brown Dog is a Lowland Single Malt Scotch Whisky matured in a refill oloroso hogshead and bottled at cask strength 55.7%.

    Little Brown Dog buys single casks from distilleries across Scotland and bottles them under its own label with the little brown dog on it. Here they got hold of a cask from The Glasgow Distillery, the first malt distillery in the city in over a century, which opened in 2015 and makes whisky under the name 1770.

    The cask is a highly active oloroso hogshead that has been working on the spirit since 2017. That gives a young whisky with far more colour and body than the vintage suggests, and the cask strength of 55.7% holds it all together. The cask yielded only 339 bottles, neither chill filtered nor coloured.

    Nose

    Dark cherry and raisin first, then cocoa and a touch of leather, with the young malt sweetness poking up underneath.

    Palate

    Powerful and juicy. Sherry fruit and muscovado in front, then orange peel, clove and a dry oak edge from the active cask.

George Dickel was born in Germany in 1818, emigrated to the US and settled in Nashville, Tennessee, in the 1850s. In 1884 he bought into the distillery at Cascade Hollow, originally founded in 1877, drawn by the pure spring water from the local limestone shelf. Like its better-known Tennessee neighbour, the whisky undergoes the Lincoln County Process, filtered through maple charcoal before barrel ageing, which gives it its signature smoothness.

    The whisky was distilled in 2014 and lay nine years in cask. The casks held sherry and then whisky once before, which gives a more measured influence than first fill wood would. The result is a balance between fruity shades and spiced notes rather than a heavy sherry bomb.

    There is a sister bottling in the same series from the same vintage, drawn a year earlier. Compared with that one this has had a little more time to gather itself, and the difference between the two is one of the clearest examples of what a single extra year in a butt does.

    Sauternes casks are expensive and rare because the wine itself is. The châteaux in Bordeaux need their barriques and do not readily sell them on. When one nonetheless ends up on a west Scottish peninsula, it is worth noticing.

    Ardnamurchan Sauternes Cask is a Highland Single Malt Scotch Whisky first matured in bourbon casks and then finished in selected Sauternes wine casks, bottled at 50% in 2024.

    Sauternes is the sweetest of the white wines of Bordeaux, made from grapes affected by noble rot. The casks add a subtle sweetness and a complexity that settles over the classic Highland malt profile without drowning it: honey, dried fruit and a lightly spiced close.

    The natural colour and unfiltered character preserve the whisky’s authentic flavour, and at 50% there is body enough to carry both the wine cask sweetness and Ardnamurchan’s own maritime edge.

    Tasting Notes

    Nose

    Nectarines and sweet pastry first, with honey and candied citrus peel behind. A rich waxiness sits beneath it all, and a light peat smoke and saline maritime note push through.

    Palate

    Rich notes of honey and dried fruit open, then a lightly spiced warmth and a dry oak note arrive. The sweetness is balanced rather than dominant, and at 50% the texture is full and nuanced the whole way.

    Finish

    Medium to long. Honey, spice and a dry close where the maritime salinity lingers beneath the sweetness.
