Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

When the festival rolls in, Glen Scotia opens its annual treasure chest, and this time it's a seven-year-old, medium-peated dram carrying the whole coast in the glass: sea salt, soft peat smoke and a wave of dark, jammy berries.

    Glen Scotia Campbeltown Malts Festival Edition 2026 is the distillery's official festival bottling for the Campbeltown Malts Festival, and the first under new Master Blender Ashley Smith. Each year Glen Scotia draws on its medium-peated spirit, produced for only a few weeks annually, to build a release that both honours tradition and plays with flavour. The 2026 edition is a single malt matured for seven years in first-fill ex-bourbon casks, letting the distillery's maritime core unfold with a creamy vanilla and fudge sweetness.

    After those seven years, the whisky was transferred to first-fill Ruby Port casks for six months. That finish is what lifts it from classic coastal Campbeltown to something more indulgent: layers of ripe cherry, blackcurrant and a warm, jammy berry sweetness playing against the peat smoke. Bottled at cask strength 53.9%, non-chill filtered and at natural colour, so the whole expression stands raw and unadulterated.

    The bottle comes in a navy blue box with a QR code that unlocks a digital tour inside the distillery in Campbeltown. A release made for those chasing character and small discoveries rather than polished perfection.

    Nose


    Sweet peat smoke greets you first, then ripe red cherries and a big dollop of creamy vanilla fudge. A trace of sea salt sits underneath, a reminder of where the whisky comes from.

    Juicy mandarin bursts forward before unfolding into indulgent blackcurrant jam and jammy red fruits - raspberry, strawberry, plum. Behind it lie layers of rich, smoky embers and a soft, peppery spice.

    The Glen Spey distillery is situated in the heart of Rothes, Speyside, and is one of the smallest in Diageo's portfolio. Founded in 1878 as Mill of Rothes by James Stuart, acquired by W. & A. Gilbey in 1887 and since 1962 part of IDV, later Diageo. Almost all production goes into the J&B blend, and official single malt bottlings have historically been rare.

    The Flora & Fauna series was launched in 1992 by United Distillers (now Diageo) as a tribute to distilleries that do not normally appear as single malts. The 26 original labels feature plants and animals from the distilleries' local environments. 12 years in oak casks at 43% delivers a classic, balanced Speyside profile: fresh, floral and lightly fruity with a creamy mid-palate.

    Nose

    Fresh and floral with light citrus – lemon, grapefruit and clementine – underpinned by green apples, pears and a delicate vanilla sweetness. Freshly cut grass and a hint of malted bread.

    Palate

    Soft and silky mouthfeel with orchard fruit – green apples and pears – combined with toffee, vanilla and a discreet spiced oak element. Orange and light almond round off the mid-palate.

    Finish

    Medium-length and clean with fresh fruit and a gentle sweetness. A classic, uncomplicated Speyside finish.

    Expert description of Glen Spey Cooper's Choice 11 Year Old

    The Coopers Choice is the series from The Vintage Malt Whisky Co., founded in 1992 by Brian Crook in Milngavie. The company takes its name from the cooper – the cask maker – one of the oldest and most essential crafts in the whisky world. Every release is single cask, natural colour and without chill filtration. The Vintage Malt Whisky Co. is known for selecting interesting and unconventional cask finishes.

    Glen Spey is the Rothes distillery that is rarely seen as a single malt. Distilled on 1 June 2010 in American oak casks, this bottling received a finishing period in a calvados cask (#803006) before bottling in January 2021. Calvados – the Norman apple spirit – leaves clear traces: sweet, crisp apple fruitiness and a lightly spiced complexity. Only 354 bottles.

    Nose

    Delicate peaches and sweet vanilla open, supported by tropical notes – mango and passionfruit – along with apple peel from the calvados cask.

    Palate

    Gentle spice and walnut whip with sweet, poached pears and stewed apples in balance with lightly malty oak. The calvados cask adds a sweet, fruity complexity without dominating.

    Glen Spey in Rothes is a distillery that rarely steps forward as a soloist. Founded in 1878 by James Stuart and sold to W. & A. Gilbey in 1887. Today owned by Diageo and primarily a supplier to the J&B blend. The special purifiers on the spirit stills create a light, floral and delicate spirit.

    Signatory Vintage from Pitlochry is one of Scotland's most respected independent bottlers. Their Un-Chillfiltered Collection sets the standard: always at least 46% ABV, no chill filtration, no added colouring. This bottling was distilled on 16 September 2010 and matured in two first fill hogsheads (#804786 and #804792), bottled on 31 May 2021. Exclusively for the Danish market.

    Tasting Notes

    Nose

    Fresh lemon peel and lightly floral tones combined with creamy vanilla and gently spiced oak. A delicate underlying maltiness.

    Palate

    Creamy and lightly oily texture – precisely because chill filtration has been avoided. Fresh pears, strawberries and ripe bananas. Liquorice notes emerge. 46% gives a pleasant bite without overwhelming the fruit.

    Finish

    Long and fruity. Bananas and pears fade slowly with a hint of soft oak.

    Expert description of Signatory Vintage Glen Spey Un-Chillfiltered Collection

    Glen Spey is one of the most understated distilleries in all of Speyside. It was founded in 1878 by grain merchant James Stuart, who initially built the site as a mill, and it was actually here that he held his licence before purchasing Macallan and selling Glen Spey on to the English wine merchant W. & A. Gilbey in 1887 – the first Scottish distillery to come under English ownership. Since then the distillery has primarily been used as a supplier to blends, and it is rare to see it appear as a single malt.

    This bottle has been bottled by independent bottler Signatory Vintage as part of their Un-Chillfiltered Collection, a series where the whisky is always bottled at a minimum of 46% and without chill filtration, so all the natural oils and structure are preserved. The spirit was distilled on 16 September 2010 and has since matured on a pair of 1st use hogsheads before being bottled on 7 January 2022 as an 11-year-old whisky. The result is a full, rounded expression of a distillery otherwise known for its light and delicate style – thanks to Glen Spey's very distinctive purifiers on the spirit stills, which increase reflux and create a cleaner, more perfumed spirit.

    Tasting Notes

    Nose

    Floral tones meet ripe pears and apples, spiced with a hint of vanilla from the casks. Beneath it all lies a light malted sweetness reminiscent of freshly baked cake.

    Palate

    The palate is soft and rounded with a grainy sweetness, fresh fruit and a touch of honey. The unfiltered style delivers a slightly fuller mouthfeel than one would normally associate with this distillery's light character.

    Finish

    The finish is medium-length with notes of malt, soft oak and a gentle spiciness that fades slowly.

    The Glen Spey distillery in Rothes is one of Diageo's most understated gems. Founded in 1878 by grain merchant James Stuart, sold to W. & A. Gilbey in 1887 as the first Scottish distillery to come under English ownership, and since then primarily used for blending – J&B is the main customer. The characteristic purifiers on the spirit stills create a light, floral and delicate spirit. Lady of the Glen (Hannah Whisky Merchants) is an independent bottler founded by Gregor Hannah, specialising in single cask bottlings at natural strength, without colour addition and without chill filtration.

    This bottling matured in a hogshead with a finish in an ex-Banyuls cask – Banyuls is a sweet, oxidative dessert wine from Roussillon in southern France, related to tawny port. It gives the light Glen Spey character a layer of dried fruit, spices and a gentle vinous depth rarely seen from this distillery. Bottled on 5 April 2023 after exactly 10 years and 4 months – 295 hand-numbered bottles.

    Tasting Notes

    Nose

    Spiced apple and dried flowers open, followed by flaked almonds, orange peel and red grapes from the Banyuls cask. Beneath it all, a light malted sweetness and a hint of vanilla.

    Palate

    Vanilla and freshly baked strudel with gingerbread and stewed berries. The high cask strength of 58.4% delivers a powerful kick that opens beautifully with a drop of water.

    Finish

    Long and spiced with candied orange and white chocolate. The Banyuls cask leaves a gentle, vinous roundness that lingers well into the finish.

    Glenallachie 15 Years is another masterpiece from Billy Walkers hand.
    When he took over the distillery in 2017, he faced a huge task of creating a core orange that would show both Walkers influence, but also the DNA of the distillery. He's certainly succeeded with the Glenallachie 15 year old. It has an incredibly beautiful and deep reddish-brown color, which has a glow similar to that of a sunset on a late summer evening.

    The nose has notes of butterscotch, Christmas spice and raisin. On the palate, the familiar sherry sweetness emerges and enchants with notes of the same Christmas spices we found in the nose, but also banana, orange peel, and dark slightly bitter chocolate. A worthy and powerful dram.
