Glen Spey distillery sits at the heart of Rothes, Speyside, and is one of the smallest in Diageo's portfolio. Founded in 1878 as Mill of Rothes by James Stuart, acquired by W. & A. Gilbey in 1887 and since 1962 part of IDV, later Diageo. Almost all production goes into the J&B blend, and official single malt bottlings have historically been rare.

The Flora & Fauna series was launched in 1992 by United Distillers (now Diageo) as a tribute to distilleries that don't normally appear as single malt. The 26 original labels depict plants and animals from each distillery's local environment. Glen Spey 2010/2021 Coopers Choice 11 year is a Speyside Single Malt Scotch Whisky matured in American oak and finished in a calvados cask, bottled at 55% by The Vintage Malt Whisky Co. The Coopers Choice is the series from The Vintage Malt Whisky Co., founded in 1992 by Brian Crook in Milngavie. The company is named after the cooper — the cask-maker — one of the oldest and most essential crafts in the whisky world. Every release is single cask, natural colour and without chill filtration.

Glen Spey is the Rothes distillery that is rarely seen as a single malt. Distilled on 1 June 2010 in American oak casks, this bottling received a finishing period in a calvados cask (#803006) before being released in January 2021. Calvados — the Norman apple spirit — leaves clear traces: sweet, crisp apple fruitiness and a lightly spiced complexity. Only 354 bottles.

Glen Spey distillery in Rothes is one of Diageo's most understated gems. Founded in 1878 by grain merchant James Stuart, sold to W. & A. Gilbey in 1887 as the first Scottish distillery to come into English ownership, and since then primarily used for blending — J&B is its principal customer. The characteristic purifiers on the spirit stills create a light, floral and delicate spirit. Lady of the Glen (Hannah Whisky Merchants) is an independent bottler founded by Gregor Hannah, specialising in single cask bottlings at natural strength, without colouring or chill filtration.

This bottling rested in a hogshead with a finishing period in an ex-Banyuls cask — Banyuls is a sweet, oxidative dessert wine from Roussillon in southern France, related to tawny port. GlenAllachie 2009 Premier Cru Classé 12 Year Old is a single cask Speyside malt whisky, finished in a French red wine cask from a Premier Cru Classé vineyard and bottled at 59.1% cask strength.

This release belongs to Batch 4 in GlenAllachie's series of single cask bottlings, where the distillery's whisky maker Billy Walker lets each individual cask speak for itself. Cask 1040 was filled on 5 November 2009 and left to rest for nearly 13 years before being bottled in July 2022. Along the way, the red wine cask from a renowned French vineyard has layered the whisky with dark fruit and tannin not found in the distillery's standard releases.

Only 323 bottles have come from this single cask, and they have been bottled exclusively for the Danish market. That makes this bottling a rare chance to taste what happens when GlenAllachie's clean spirit meets the legacy of a French wine cellar.

Tasting notes

Nose

Dark forest berries, redcurrant jelly and a hint of tobacco meet sweet vanilla and a gentle spiced warmth from the oak. Underneath sits a touch of fresh brioche and a tangy note reminiscent of red wine left to breathe.

Palate

Full-bodied and powerful, with flavours of dark chocolate, blackcurrant and a whisper of clove. The cask strength brings noticeable warmth, but the dark fruit and soft tannins keep it balanced, while caramelised sugar and toasted almonds emerge along the way.

Finish

Long and dry, with lingering notes of dark fruit, cedar wood and a light bitterness from the wine cask, slowly giving way to a sweetness reminiscent of dark marmalade.

GlenAllachie 2011/2023 Ruby Port Pipe 11 Year Old Batch 6 is a Speyside Single Malt Scotch Whisky, fully matured in a single ruby port pipe, bottled at cask strength of 58.2%.

The whisky was distilled on 25 October 2011 and left to rest in Cask No. 7445 until July 2023, when it was bottled. More than 11 years of maturation in a single port pipe has given the whisky a deep, fruit-driven character not found in the more blended batches.

The cask forms part of Batch 6 in the single cask series, and with only 797 bottles drawn from this exact cask, it counts among the distillery's more limited releases.

Tasting notes

Nose

Ripe red berries and a light wine-like sweetness from the port meet spiced oak. There's depth on the nose, almost like dark fruit cake, with a hint of spice in the background.

Palate

The palate offers the same red-berry sweetness, now with more weight and a touch of dried fruit. The port cask shines through with a tart-sweet balance, while the spices push back.

Finish

Long and fruit-driven, with a lingering sweetness from the port that slowly gives way to dry oak.
