Thy Spelt-Rye 2020 is the latest addition to Thy Whisky's series, which they call Spelt-Rye. Produced in collaboration with Nordisk Brænderi. They make their spelt rye on the family farm Gyrup in Thy. In the middle of the storm-blasted North Sea dunes and the soft meadows down towards the Limfjord. Surrounded by hawboere, characterized by the sand and the North Sea, and fjordboere surrounded by the gentler fjordland to the east.

Made from 42% Svedjerug, 11% spelt and 47% Odyssey spring barley and aged in a fresh virgin American oak barrel, with only 1078 bottles. Not cold filtered and natural color grown and brewed at Gyrup.

Inspired by the natural beauty of the area, Bøg is crafted from organic barley sourced from the fields surrounding the distillery. Each grain is meticulously malted and smoked on their drum malting floor, where the smoke originates from beechwood. The process of single distillation is carried out with special care to preserve the malted and robust smoky notes that characterize this whisky. After distillation, it is carefully aged in old sherry casks that previously held oloroso and PX sherry. For this special occasion, they have chosen a type of whisky that they have never bottled before. The distillate is redes 'Kara' distillate with a hint of peat smoke. The whisky has been aged for 4-4 1?2 years in ex-bourbon and PX sherry casks.

Aromas of burnt caramel, the deep sweetness of PX sherry and fresh vanilla from the bourbon barrels merge into a very round and complex sweetness. The peat adds a touch of 'green', acidic notes such as grass and citrus fruits. They have bottled the whisky at 49.5 % alc.vol. where the whisky is intense and aromatic but at the same time feels very soft on the tongue. Finally, it has been given a short finish in stout casks that have aged Limfjordsporter (their favorite stout) at Thisted Bryghus. This is the third time they have bottled a "Stovt". This time they have turned up the beechwood smoke a bit and the bourbon barrels have a larger part of the credit for the cask character. The whisky is composed of barrels that are 3-6 years old. The result is a lightly smoky whisky with a complex sweetness with notes of bourbon vanilla, fruit, soft toffee, burnt caramel and a hint of sweet licorice. Thy Whisky No 20 Maltmod is a single malt whisky shaped and created by experiments in Thy Whisky's own maltings. It is characterized by a rich and alluring aroma of caramel, which stems from experiments in their maltings with dark 'caramel malts', which otherwise hardly ever find their way into traditional whisky production. The intense 'Cara' new make has been aged in 12 small bourbon octaves (50 liters), then larger bourbon casks, and finally blended with two oloroso casks, which have then been given time to accumulate in the barrels.

The result is a whisky with great vanilla sweetness and intense burnt caramel with underlying fruit notes. On the nose, there are notes of leather and cedar with a faint hint of tobacco. The taste starts with sweet vanilla toffee, nougat and a little pickled fruit and ends in burnt caramel with a hint of cloves and oak. Thy Whisky No 23 - Hawboen is composed of 3-8-year-old barrels, some with a mild beechwood smoke, others with our unpeated 'Pale' new make. We have bottled the whisky at 51.5% vol., where the whisky is balanced between strength, intensity, smoothness, and aroma. It is a fruity and mildly beechwood-smoked whisky. The whisky has vanilla sweetness, citrus, smooth caramel, toasted coconut, warm spices, beech sap, a gentle warming smoke, and a hint of a maritime, salty impression.

In addition to a few single casks, "Hawboen" is the first purely bourbon cask-matured whisky, bottled since 2016. It will be the second-to-last bottle in their numbered series (1-24), which concludes in 2024, ten years after their first bottling.
