Kilchoman Whisky

Anthony Wills built his small farm distillery on Islay in 2005 with a dream of doing the whole whisky process from soil to bottle, something almost no other distillery on the island attempts. Kilchoman is still family-owned, still small, and still obsessed with the field the whisky grows in.

    November 2006 was still the distillery's first year, and this sherry butt is one of the very earliest testimonies to how Kilchoman sounded before the world had really discovered them.

    Kilchoman 2006/2010 Single Cask FC Whisky Denmark 3 is an Islay Single Malt Scotch Whisky, 4 years old from a single sherry butt and bottled at cask strength, 59.9 %.

    The whisky was distilled on 8 November 2006, just over a year after Kilchoman was founded, and matured for four years in a single sherry butt — cask number 316 — before being bottled on 10 November 2010. It is the third release in the former FC Whisky Denmark series.

    Because it comes from a sherry butt, one of the largest cask types in the whisky world, the spirit gets far more contact surface with the wood than in smaller casks, giving a deeper, spicier sherry character after just four years.

    Nose

    Rich sherry sweetness meets dark fruit and peat smoke, with a hint of toasted nuts and spice.

    Palate

    Full and spiced at cask strength, with sherry sweetness, dark chocolate and a distinct, well-balanced peat smoke.

    The whisky was distilled on 29 March 2006 and bottled exactly five years later, on 29 March 2011, from bourbon cask number 03/06. That makes it one of the earliest releases where Kilchoman dared to commit to a fixed 5 year age statement, at a time when the distillery was still known mainly for its young, energetic 3 year old releases.

    As a cask strength bottling from a single cask, the whisky shows Kilchoman's character completely unfiltered — intense, powerful and carrying the distinct signature only one individual cask can give.

    Five years is not much for a whisky, but for Kilchoman in 2011 it was a milestone. 2006 Vintage Release was one of the very first times the distillery dared to call its spirit a proper 5 year old whisky.

    In the years following its 2005 founding, Kilchoman regularly released small, season-named bottlings — Autumn 2009, Spring 2010, Summer 2010, Winter 2010 and finally Spring 2011 — each a snapshot from a distillery still finding its identity. All sold out shortly after launch.

    In 2012, Kilchoman decided to gather its standard release under one name, Machir Bay, and the season-named releases became history. Spring 2011 is therefore one of the last bottles from this period still to be found.

About Kilchoman Whisky

Kilchoman is Islay's youngest distillery and the only one that grows and malts part of its own barley right on the farm where the distillery sits. That makes Kilchoman close to a true farm-to-bottle operation in an industry where most raw materials now come from elsewhere, and it's exactly that full control over the process that has earned the distillery a reputation as one of Islay's most exciting newcomers. For collectors, early rare releases like Vintage 2006 and the Inaugural Release are sought after, while beginners usually meet the distillery through its accessible core release, named after the nearby bay, Machir Bay.

History & background

Anthony Wills founded Kilchoman in 2005, Islay's first new distillery in over 120 years. As early as 2009 came the first releases, Inaugural Release and Autumn 2009, snapped up within days. In 2012 the distillery decided that Machir Bay would become its permanent core release, and the series has since won several awards, including Scottish Whisky of the Year in 2013. Kilchoman remains family-owned and run by the Wills family, with the sons involved in sales and development, while day-to-day operations are today led by key figures such as General Manager Islay Heads and Production Manager Robin Bignal.

Production & style

Kilchoman floor-malts part of its own barley right on the farm and uses exclusively peated malt throughout production, giving a consistently smoky character across the whole range. The most extreme expression of that philosophy is 100% Islay, where grain, malting, distillation, maturation and bottling all happen entirely on the distillery's own land.
