Coopers Choice Whisky

Cooper's Choice pays tribute to the craftsmen without whom there would be no whisky to collect at all — the coopers, whose trade shaped the dram long before the first drop touched a glass. Every cask in the series is chosen for its ability to make a familiar distillate unpredictable again. This is whisky for those who've tasted most of it and are still hunting for the surprise.

    Heavily Peated it says on the label, and that is worth reading twice. Ardmore normally sits moderate on the peat, but when the distillery turns it up and a single cask catches it, you get something quite different from the usual Highland smoke.

    Ardmore 2016 Heavily Peated Coopers Choice is a Highland Single Malt Scotch Whisky matured in a used bourbon cask and bottled at 46%. Cask 8048 was distilled in 2016 and gave 270 bottles.

    The Coopers Choice is the single cask range from The Vintage Malt Whisky Co., a house founded in 1992 by Brian Crook. He holds an honours degree in food science and had twenty years in the malt whisky trade behind him, latterly as export director for one of Scotland’s principal distillers, before setting out on his own.

    A used bourbon cask gives less vanilla and less colour than a first fill, and that is precisely why the smoke can stand out so clearly here. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Dry peat smoke first, more soot and embers than open fire. Behind it come vanilla, toasted malt and a light citrus peel. There is a clear earthy note that is Ardmore’s fingerprint.

    Palate

    The smoke fills the mouth immediately and stays. Beneath it sit malt sweetness, baked apple and a touch of honey, while a dry peppery note tightens things mid-palate. At 46% the body is good, and the cask’s restraint lets the smoke take the lead.

    Finish

    Long and dry. Ash, malt and a lightly bitter oak note that lets go slowly.

    Pineau des Charentes is neither wine nor cognac but something in between: grape must blended with young cognac and rested in cask. Putting peated Highland malt into a cask like that is an idea few would have had, and the name on the bottle says exactly what came out of it.

    Ardmore Coopers Choice Peat & Fruit is a Highland Single Malt Scotch Whisky finished in a Pineau des Charentes cask and bottled at 56.5% cask strength. Cask 9522 gave 340 bottles.

    Pineau des Charentes is made in the cognac region by blending fresh grape must with young cognac, which stops the fermentation and keeps the sweetness. The cask therefore leaves both fruit sweetness and a light brandy character, a combination that meets Ardmore’s peat smoke in a very different way from sherry or bourbon.

    The result is right there in the name: smoke and fruit side by side rather than one on top of the other. The whisky is neither chill filtered nor coloured, and it is bottled at cask strength.

    Tasting Notes

    Nose

    Peat smoke and sweet grape fruit at the same time. There is apricot, grape and a light honey note, and beneath it the dry earthy smoke Ardmore always carries. At 56.5% the alcohol is obvious, so let the glass sit a moment.

    Palate

    Sweet opening with grape fruit, apricot and caramel, then the smoke arrives from the side and tightens things along with a dry peppery note. The two elements work against each other in a way that keeps the mouth awake. The texture is full and lightly syrupy.

    Finish

    Long. Fruit sweetness and smoke let go at roughly the same time, with a dry oak note and a final trace of grape must.

    Did You Know?

    Pineau des Charentes is said to have come about by accident in the sixteenth century, when a winemaker mistakenly poured grape must into a cask that still held cognac. Decades later he discovered the contents had turned into something else entirely, and far better than he had expected. It is not often a cask type has such a specific origin story.

    This release was distilled at Bunnahabhain and finished in oloroso sherry casks from cask #0322, adding both depth and a warm smoky character to the already peated spirit.

    Cambus stood in Clackmannanshire and was one of the classic Lowland grain distilleries. It closed in 1993, and the buildings today serve only for cask repair. With no wine or sherry finish, this bottling is a clean reading of what time and American oak can do.

    After thirty-two years the strength sits at 47.5%, which tells you the cask lost some power along the way. That is typical of very long maturation in a quiet warehouse and gives a softer whisky than bottlings still above 50%.

    Nose

    Rich and heavy with plums, figs and dates – no smoke on the nose.

    Palate

    Smoke and ashy tobacco meet milk chocolate, smoked meat and oily malt, with a touch of pink peppercorn and sweet toffee.

    Finish

    Short but sweet finish that dries out with cracked peppercorns and a lingering hint of bonfire embers.

    Tasting notes

    Nose

    Dark and syrupy. Raisin, date and fig, with dark chocolate, coffee and a young, cereal freshness underneath.

    Palate

    Dense and sweet. Caramelised sugar, dried fruit and cocoa, with a peppery warmth from the cask strength. The PX cask dominates, but the young spirit pushes back with cereal and malt.

    Finish

    Dumbarton no longer exists. The great red brick complex on the river Clyde was pulled down, and all that remains are the casks that made it out in time. This is one of them.

    Dumbarton 2000/2021 Coopers Choice 20 Years Old is a Lowland Single Grain Scotch Whisky matured in a bourbon cask and bottled at cask strength 56.5%.

    Hiram Walker built Dumbarton in 1938 as one of the largest grain distilleries in Scotland, and for decades it supplied the backbone of the Ballantine’s blends. Production stopped in 2002, the buildings came down, and the site has since become housing. That turns any bottling carrying the Dumbarton name into a time capsule, because no more is coming.

    This cask, number 211097, was filled in November 2000 and bottled in 2021 after twenty years. The Coopers Choice is The Vintage Malt Whisky Company’s range of single cask bottlings, and as usual they have neither chill filtered nor coloured it. The cask gave 234 bottles.

    Tasting notes

    Nose

    Coconut and vanilla pod settle first, then buttery pastry, ripe banana and a faint note of sawdust off the active bourbon wood.

    Palate

    Sweet and oily in spite of the high strength. Caramel, corn sweetness and creme brulee, with a growing spice of nutmeg and white pepper.

    Finish

    Long and warm. Toffee, toasted oak and a dry, almost powdery close that is typical of well-aged grain whisky.

    Glen Spey is the Rothes distillery that is rarely seen as a single malt. Distilled on 1 June 2010 in American oak casks, this bottling received a finishing period in a calvados cask (#803006) before being released in January 2021. Calvados — the Norman apple spirit — leaves clear traces: sweet, crisp apple fruitiness and a lightly spiced complexity. Only 354 bottles.

About Coopers Choice Whisky

Coopers Choice is a series from the Scottish bottling house The Vintage Malt Whisky Company, named in honour of "coopers", the craftsmen who build and maintain the oak casks whisky matures in. The series focuses on limited single cask releases from Scottish distilleries, often with experimental cask maturation and finishes, letting collectors taste a familiar distillery in a completely different cask style than usually seen in official releases. For beginners, Coopers Choice is an affordable way into single cask whisky, while seasoned collectors often chase the rarer cask types in the range.

History & background

The series is released by The Vintage Malt Whisky Company, a Scottish bottling house rooted in the independent whisky trade, where the name Coopers Choice deliberately honours the craft behind the cask itself rather than the distillery. The philosophy behind the series is that the cask matters just as much to the finished whisky as the distillate itself, and that the cooper's work therefore deserves its own spotlight. Over the years the series has grown to cover a broad range of Scottish distilleries and regions.

Production & style
