Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

    Talisker 10 Year Old is an Isle of Skye Single Malt Scotch Whisky, matured in oak casks and bottled at 45.8%. It is the distillery's flagship and one of the original six Classic Malts, a series UDV (now Diageo) put together in 1988 to showcase Scotland's different regional styles.

    The colour is a shining gold, and the whisky carries a depth and intensity that has made it a standing reference for what an island whisky from Skye should taste like. Since 2021 the bottle comes in packaging where both the glass and the box are 99.8% recyclable.

    Nose

    The nose offers smoke, sea salt and citrus, with a sweetness that keeps the saltiness in check. There's also a hint of black pepper hinting at the bite to come.

    Eight years does not sound like much, but on a light Lowland spirit it is enough. The bourbon cask has had time to set vanilla and fudge in place without smothering the freshness that makes the style recognisable.

    Bladnoch 8 Years is a Single Lowland Malt Whisky matured in refill bourbon casks and bottled at 46%.

    This is an older version of the distillery's eight year old, a bottle from before the current range was built. Refill bourbon casks were chosen precisely so as not to drown the spirit, and the result is soft and round with plenty of sweetness.

    Bladnoch sits in Galloway and is Scotland's southernmost distillery. The house works with unpeated malt and a pale spirit style, where bourbon casks have traditionally formed the backbone of the range.

    Nose

    Vanilla and fudge first, then fresh apples, a little coconut and a light grainy sweetness.

    Palate

    Soft and round with caramel, vanilla and white fruit. The 46% gives it enough body to keep the sweetness from flattening out.

    Tasting this whisky today is like tasting the story of a distillery still finding its own voice — young, raw and intense, but already carrying the citrus-fresh peat smoke that would later define Kilchoman's style.

    Caol Ila 12 Year Old Single Islay Malt Whisky is the distillery's official age-stated core expression, matured for at least 12 years, bottled at 43%. Caol Ila Distillery was founded in 1846 on the shore of the Sound of Islay, from which the distillery also takes its name — Gaelic for 'Sound of Islay'.     The distillery was founded in 1869 by John Smith at Ballindalloch and still draws water from the Craggan Burn alongside it. The unusual part is the equipment: the pot stills have short, flat-topped necks, and condensing happens in worm tubs rather than modern shell-and-tube condensers. Both give less copper contact, and the result is a heavier, more layered spirit. The 12 year old is the core expression and Speyside's seat in Diageo's Classic Malts range.

    Sweet herbs and meadow flowers, honey and vanilla. Behind them sit a dry malted cereal note and a trace of resin.

    The whisky was distilled on 8 November 2006, just over a year after Kilchoman was founded, and matured for four years in a single sherry butt — cask number 316 — before being bottled on 10 November 2010. It is the third release in the former FC Whisky Denmark series.

    Because it comes from a sherry butt, one of the largest cask types in the whisky world, the spirit gets far more contact surface with the wood than in smaller casks, giving a deeper, spicier sherry character after just four years.

    There is a handful of bottles the whole whisky world uses as a yardstick, and DoubleWood is one of them. It was not the first whisky to see two cask types, but it was the one that made the rest of Scotland understand why that was a good idea.

    Balvenie 12 DoubleWood is a Single Speyside Malt Whisky matured in American oak casks, finished in Oloroso sherry casks and bottled at 40 %.

    DoubleWood is David Stewart's work. He was Malt Master at Balvenie for more than five decades and was already experimenting in the 1980s with moving fully matured whisky into a second cask type for the final months. Today the method is called cask finishing and almost everyone uses it, but DoubleWood from 1993 was the release that put it on the map.

    The first nine to twelve years are spent in traditional American oak casks, which give vanilla, honey and a light, creamy texture. The whisky then moves into European Oloroso sherry casks for roughly nine months, and that is where the raisin, orange peel and spice arrive. The parcels are finally married in a large tun before bottling.

    Nose

    Honey and dried fruit first, then vanilla, cinnamon and a note of orange peel. A light nutty warmth sits underneath it all.

    Palate

    Round and soft with raisin, spiced oak and vanilla sweetness. The sherry influence is clear but never heavy, and the malt holds the balance the whole way.

    Glenturret is the oldest working distillery in Scotland, and it almost never makes peated whisky. Almost. The handful of casks that do get made end up here, and that is the entire reason Smoky Black tastes the way it does.

    Famous Grouse Smoky Black is a Blended Scotch Whisky made with peated malt, matured in oak casks and bottled at 40%.

    The blend launched in 2015 as the successor to The Black Grouse and is built around a rare peated expression of Glenturret. This is not an Islay whisky poured into a blend. It is malt from a Highland distillery that carries its peat smoke from home, and it gives a different kind of smoke: drier, more bonfire-like and less medicinal than the west coast style.

    Beneath the smoke sits the classic Grouse profile of honey and fruit, bound together with grain whisky. The master blenders select both malt and grain casks with enough character to carry the smoke rather than vanish behind it. The brand has been owned by William Grant & Sons since July 2025.

    Adelphi is known for saying no. Of the casks they get offered, very few are approved to carry the name. Private Stock is the house blend, the place where they show what they can do with an assembly rather than a single cask.

    Adelphi was founded in 1826 as a distillery on the Clyde on the edge of Glasgow. It closed in the early twentieth century and the name lay dormant for almost a hundred years. In 1993 it returned as an independent bottler when Jamie Walker, great-grandson of the former owner Archibald Walker, started the firm again. Donald Houston and Keith Falconer took over in 2004 and later built the Ardnamurchan distillery on the Scottish west coast.

    Adelphi’s selection is famously strict: only a small fraction of the casks the house tastes make it through. Private Stock is the bottle where that philosophy meets everyday drinking.

    Nose

    Bright and straightforward. Malt, honey and a touch of green apple first, then vanilla and a light cereal sweetness. There is a clean thread running through it all, no sharp edges and no smoke.
