  • Secret Speyside 2009/2023 Signatory Vintage 13 Year Old Single Malt Scotch Whisky
    Item no.: 059763-615-936

Behind the label "Secret Speyside" hides one of Scotland's most sought-after distilleries. Signatory Vintage chose well here — 13 years in cask, 46%, bottled in 2023.

    Expert description

Secret Speyside 2009/2023 Signatory Vintage 13 Year Old is a Speyside Single Malt Scotch Whisky distilled in 2009 and bottled in 2023 at 46%. Behind the anonymous name is Macallan distillery — a common practice among independent bottlers who purchase casks directly from distilleries. Signatory Vintage, founded in 1988 by Andrew Symington, is one of Scotland's most respected independent bottlers, known for selecting and bottling single cask whiskies with minimal intervention.

13 years is a fine age for Speyside spirit — old enough to have rounded off the sharper edges, young enough to retain fruit character and vitality. The result is a whisky that moves from a gentle, fruity nose to a lightly sweet, spiced palate with good balance.

    Tasting notes

    Nose

Stewed plums and vanilla with soft malt notes. Light shortbread and icing sugar, supported by a hint of citrus and light syrup.

    Palate

Sweet entry with golden syrup and vanilla cream. Citrus notes emerge — bergamot and pomelo — with light oak behind.

    Finish

Medium length and sweet with a touch of spiced oak. Banana and soft freshness linger.

    Item no.: 22227865395-8970-002

Starward steps off the beaten path, letting French oak and red wine shape this expression.

    Expert description

Starward LEFT-FIELD French Oak Red Wine Matured Single Malt Whisky is matured in French oak casks that previously held red wine, bottled at 40%. Starward was founded in 2007 by David Vitale, who set out to create an unmistakably Australian whisky and rejected the notion that great whisky could only come from Scotland, Ireland or Japan. The distillery's hallmark is that the whisky is matured exclusively in Australian wine casks rather than the traditional ex-bourbon or sherry casks, establishing an entirely new style within world whisky. In 2016 the distillery moved to a purpose-built site in Port Melbourne.

    Tasting notes

    Nose

The nose is fruity with red berries, vanilla and a hint of spice.

  • The Antiquary 21 Year Old Blended Scotch Whisky bottle
    Item no.: 059763-615-531

Twenty-one years is rare for a blend. Time settles here as a quiet layer of honey and old oak over every drop.

    Expert description

The Antiquary 21 Year Old is a blended Scotch whisky in which Highland and Speyside malt whisky is married with Lowland grain whisky for at least 21 years before bottling at 43% ABV.

This bottling carries no additional cask finish, letting the long maturation alone shape the character, a counterpoint to the house's finished expressions in Claret and Port casks.

The Antiquary was founded by the Hardie brothers in Edinburgh in the late 19th century and now belongs to Tomatin Distillery Co, which carries on the Victorian blending tradition.

    Tasting notes

    Nose

Beeswax, dried apricot and a touch of toasted almonds over a deep, malty base.

    Palate

Soft caramel, old oak and a hint of orange peel gliding easily across the tongue.

  • The Observatory 20 Years Signature Series Single Grain
    Item no.: 22227865480-67093-0184

A lighthouse cuts through fog and darkness, night after night, year after year. The Observatory is named for Scotland's many coastal lighthouses and celebrates that same patient endurance in its own long maturation.

    Expert description

The Observatory 20 Years is a Single Grain Scotch Whisky bottled at 40% ABV from the Signature Series, distilled at the Macduff distillery, also known for producing the Single Malt whisky Glen Deveron.

The lighthouse on the box is the series' recurring symbol, referencing the many lighthouses that line Scotland's coastline and have guided sailors safely to harbour for centuries. The series was created by master blender Stephanie Macleod, one of the industry's few female master blenders.

The whisky has matured for 20 years in a combination of used sherry casks and Virgin Oak, a pairing that gives this grain whisky an unusual depth and complexity more often associated with single malt than single grain.

The result is an unusually soft mouthfeel with pronounced sherry sweetness, vanilla and dark chocolate, setting it apart from the lighter, more neutral style many associate with grain whisky.

    Tasting notes

    Nose

Sweet sherry and toasted vanilla meet fresh summer berries and a touch of citrus.

    Palate

Mouth-filling and soft, with ripe grapes, vanilla and cane sugar sweetness.

    Finish

Warm and dry, with a lightly spiced close.

    Investment potential

A 20-year-old Single Grain from a named source distillery is relatively rare on the market, since most grain whiskies are bottled far younger, giving The Observatory an interesting position for collectors with an interest in the grain category.

    Did you know?

Single Grain whisky differs from Single Malt in that it is distilled from grains other than exclusively malted barley, often wheat or corn, typically on a continuous column still rather than traditional pot stills, giving a lighter, more neutral base character that here has been transformed by 20 years of cask maturation.

    Item no.: 222333-4445

Pedro Ximenez. The sweetest sherry that exists. Thy Whisky PX Shared Cask No 445 is a Danish single malt finished in a PX sherry cask – and bottled directly without dilution.

    Expert description

Thy Whisky PX Shared Cask No 445 is a Danish Single Malt Whisky bottled at cask strength 60% in a 50 cl bottle. Distilled and matured at Thy Whisky Distillery in Thy. PX refers to Pedro Ximenez – an intensely sweet Spanish sherry grape variety used to season casks that give the whisky an extraordinary sweetness and dried fruit complexity. Cask No. 445 is a Shared Cask: bottled for a group of private co-cask owners.

60% cask strength with PX influence is a fascinating combination. The sherry softens the alcohol and adds a natural sweetness that balances the strength surprisingly well.

    Tasting notes

    Nose

Rich and sweet with raisin, fig, dark honey and light spices. The PX cask dominates but in a pleasant, inviting way.

    Palate

Intense sweetness with dark dried fruit, chocolate and light oak warmth. The strength is carried well by the natural PX sweetness.

    Finish

    Expert description

WhistlePig Farmstock Batch 003 Rye Whiskey is a blend of rye whiskey from different ageing periods, bottled at 43%. WhistlePig was founded by Dave Pickerell, former master distiller at Maker's Mark and often called the 'godfather of craft distilling', who bought an old dairy farm in Shoreham, Vermont, in 2007. Pickerell took a bold gamble by investing in 10-year-old rye whiskey from an undisclosed Canadian distillery, made from 100% rye, at a time when rye whiskey had not yet been rediscovered by the American market. The distillery officially opened in 2015 in a renovated 150-year-old barn and is today the world's most awarded producer of rye whiskey.

Beneath the northern lights that give this whisky its name, Wolfburn's casks mature slowly in warehouses at the very edge of mainland Scotland. Aurora is the house's tribute to that very light phenomenon.

    The expert's description

Wolfburn Aurora Single Malt Scotch Whisky 46% is a Single Highland Malt Scotch Whisky, matured in American oak and Spanish Oloroso sherry casks and bottled at 46%.

The whisky was created by distillery manager Shane Fraser in a limited outturn of 3,000 bottles, matured in a combination of American oak and Spanish Oloroso sherry casks. The long fermentation and slow, gentle distillation produce a spirit later matured on-site in the distillery's own warehouses.
