    There is something quietly contrary about doing it the other way round. The world is full of whisky that has been given a rest in used rum casks. Here it is the rum that travelled north to Scotland and settled into a cask that once held single malt. The nose says Caribbean. The tail says Highlands.

    Opthimus 15 years barricas de Malt Whisky Finish is a Dominican Rum from Oliver & Oliver, solera aged in ex-bourbon casks and finished in Scottish Single Malt Whisky casks before being bottled at 43%.

    Oliver & Oliver is based in Santo Domingo, but the family story starts in Cuba, where Juanillo Oliver built his first rum operation in the late 1800s. When the family picked up the thread again in the 1990s, they did so from the Dominican Republic. The house distils and blends molasses rum on column stills and supplements it with distillates from Panama, Trinidad, Colombia and Nicaragua among others. That blending is the house signature, and exactly what goes into any given bottle is something they keep to themselves.

    Maturation follows the solera principle, the same system the sherry houses of Andalusia have used for centuries. Casks are stacked in tiers, and rum is always drawn from the bottom and oldest row, which is then topped up from the row above. The 15 on the label refers to the oldest rum in the system, not to every drop in the bottle. What you get is a rum carrying both youthful fruit and the deep, reduced note that only long cask time delivers.

    After the solera ageing in ex-bourbon casks, the rum moves into casks that previously held Scottish Single Malt Whisky. This is where the bottle stands apart. The whisky cask lays a dryness over the Spanish-style sweetness, pulls the spice forward and gives the finish an edge the Opthimus range is not otherwise known for. This release was bottled in 2018 as a limited and numbered run of 3,000 bottles.

    Tasting notes

    Nose

    Vanilla and light honey first, then dried fruit and cask wood. Underneath sit cinnamon, sandalwood and a dry, almost malted note that has no business being in a typical Dominican rum.

    Palate

    Full and soft with clear toffee and vanilla sweetness. Then the whisky cask arrives from the side with pepper, toasted nuts and a dryness that keeps the sugar in check. Oak runs through the whole thing without ever taking over.

    Finish

    Long and warm. The dryness from the malt cask lingers alongside pepper and one last trace of syrup sweetness.

    Did you know?

    The casks used for the finish come from Tomatin in the Scottish Highlands. It is rare for a distillery to send its used casks in that direction. Traffic normally runs the opposite way, with Scottish distilleries queueing up for rum casks to finish their whisky in.

    Time works faster here than in a Scottish dunnage. The casks give up their character at a pace no cool northern cellar can match, and the angels take their cut every single year.

    Opthimus is the Oliver family's answer to what that heat can do, if you still have the patience to wait.

    The expert's description

    Opthimus 18 years Cum Laude 2019 is a Dominican Rum from Oliver & Oliver, matured in ex-Bourbon casks of American white oak and bottled at 38%.

    Oliver & Oliver is a family business with Cuban roots. The family left Cuba in 1959, and it was not until the early 1990s that the company was rebuilt in the Dominican Republic, where it sits today in Hato Nuevo outside Santo Domingo. The house does not distil its own spirit. It blends and matures molasses-based distillates under maestro ronero Don Pedro Oliver.

    Maturation follows the Sistema Solera, the Spanish pyramid system originally developed for sherry. Rum of different ages is blended continuously through a tier of casks, so a fraction of the oldest rum always carries forward. The 18 on the label refers to the oldest rum in the blend, not to everything in the bottle. That is worth knowing if you come from whisky, where an age statement means precisely the opposite.

    Cum Laude is Oliver & Oliver's own designation for the bottlings the house rates highest, and it appears only on selected releases. This one was bottled in 2019 in a run of 1,000 bottles. Every bottle is filled, labelled and numbered by hand, and the label carries the maestro ronero's signature. The casks are former Bourbon barrels from Kentucky, made from American white oak, and they are the source of the vanilla, coconut and soft timber running through the whole palate. The 38% is a deliberate house choice: this rum is built for softness rather than punch.

    Tasting notes

    Nose

    Warm vanilla and light honey lead. Behind them come toffee, dried fig and a mild cocoa note, and right at the back a trace of pipe tobacco and dry oak.

    Palate

    Soft and rounded. Honey and caramel carry the opening, then dark chocolate and roasted coffee unfold, with a faint peppery edge and a hint of ginger in the background keeping the sweetness in check.

    Finish

    Long and spiced-sweet. The vanilla lingers longest, alongside sweet oak and a dry tobacco note right at the end.

About Oliver & Oliver

Oliver & Oliver is a family-owned rum house based in Santo Domingo that specializes in seeking out, buying, and maturing outstanding rum from several Caribbean countries of origin rather than distilling itself. That makes the house something of a curator rather than a traditional distillery, and this role has given Oliver & Oliver a sharp eye for quality; they know the distillates, casks, and warehouses better than most, resulting in rum that's approachable for beginners yet serious enough for collectors.

History & Background

The Oliver family has roots in the Dominican rum trade going back generations, gradually building a network of suppliers across the region. Rather than building its own distillery, the house has cultivated relationships with existing producers, giving access to a broader range of styles than any single distillery could offer.

Production & Style

The rum is distilled in its respective countries of origin and then shipped to the Dominican Republic, where Oliver & Oliver composes the final blends. Many expressions are aged using the solera method, where younger rum is continually blended with older vintages across a series of linked casks, so the finished product always carries a trace of the very oldest drops.
