Arensbak is not made from grapes. It is made from tea - kombucha, a fermented drink over 2000 years old - shaped by a Danish team consisting of a sommelier, a microbiologist and a branding expert, with the stated goal of recreating wine's complexity without a single grape in the recipe.
Expert's Description
Arensbak Blanc is an alcohol-free, kombucha-based drink from Denmark with an alcohol content of max 0.5%. The drink belongs to the "proxy-wine" category, where alcohol is not simply removed from regular wine, but the product is instead built from scratch based on fermented tea, fruit juice and botanical ingredients to mimic wine's structure and gastronomic potential. Arensbak was founded by sommelier Emilie Ost-Jacobsen, fermentation specialist Bram Kerkhof and Christian Arensbak, and has won awards at the World Alcohol-free Awards. The Blanc edition uses jasmine tea as its base, giving it its characteristic floral aroma.

Nose

Palate
Fruity notes of melon, quince and fresh citrus on the palate, combined with a hint of vanilla from ageing on oak chips.
Finish
The finish is velvety, fruity and dry.
