Smoked cod with whisky, mash, coarse mustard and Brussels sprouts, 4 people - with Talisker 10 years old

4 pieces of cold-smoked cod of approx. 125 grams,
600 g. baked potato,
300 g. Brussels sprouts,
1 finely chopped organic lemon,
100 g. butter,
2 dl. whipping cream,
1 dl Talisker 10 Years Old,
2 tbsp. coarse mustard, salt/pepper.

- Peel the potatoes, cook them until reasonably tender in lightly salted water and drain.
- Cook the Brussels sprouts al dente, drain and chop finely. Save some leaves for garnish.
- Make a coarse mash of the potatoes, mix in the Brussels sprouts and the pickled lemon with butter. Can be mixed in advance and reheated later.
- Poach the fish skin side down for five minutes. Take it out and remove the skin.
- Gently heat the cream and add the mustard and whisky. Let it reduce and thicken.
- Arrange the fish on top of your mash and pour on a generous amount of sauce. Garnish with Brussels sprout leaves and other greens according to mood and taste.

About Talisker 10 years

Talisker Distillery was founded by two brothers who came to Skye from the nearby and smaller island of Eigg in 1825. After five years old of less successful attempts, they were finally ready to open the first distillery in 1830 and it's still there, surrounded by the dramatic Cuillin Hills. They still make some of the best single malt Scotland has to offer with great skill and tradition, spread across a wide range of bottlings of up to 30 varieties in all price ranges.

Talisker 10 years old is one of my favorite smoked whisky because of its diverse nuances. The aroma immediately brings you to a campfire by the North Sea with the salty haze and light smoke in the background well blended with leather, black pepper, coffee, sour fruits and caramel. The taste is seductive and slightly smoky with a little brine, dry leather and chili and the finish is medium dry and gives you a long feeling of sweetness with loamy earth at the very end. Very nice and balanced throughout the tasting.


About the cookbook: Mad med promiller
Over the spring, the two owners of the Nordic region's largest liquor store, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream. With the help of a good friend of the house, Jan Ohrt, the book Mad med Promiller #1 is now a reality and it was presented on Saturday, August 5, 2023 at an informal premiere in the more than 400m2 store at Vejstruprødvej 15 in Sjølund.

The project has been created with the benevolent support of some of the store's suppliers and the idea is that it is given free of charge to customers every time they buy a bottle that is represented in the book.
