    Spring in Andalusia comes with a dress code: sunshine, music and a tall glass of ice, mint and something pale yellow in every hand. That glass is a rebujito. Barbadillo has put it in a can, so you can take it to the beach, out on the balcony or down to the garden without hauling a bottle of Manzanilla and a crate of lemonade along.

    Barbadillo Mixed Rebujito Manzanilla & Lima Limón 25 cl is a Wine-Based Drink from Sanlúcar de Barrameda in Andalusia, made with Manzanilla from the Palomino Fino grape and lemon-lime soda, with an alcohol content of 4.9%.

    The rebujito is an Andalusian classic. Traditionally you mix Manzanilla with lemon-lime soda and drop a sprig of mint in the glass. Barbadillo has done the mixing for you and put the recipe in a can. According to the label, Manzanilla makes up 28.6% of the drink. The rest is carbonated water, sugar, lime juice, lemon juice and natural flavourings with hints of mint. The wine never drowns out the other flavours, but you can still taste it.

    Manzanilla is a dry wine in the sherry family, and it can only be made in Sanlúcar de Barrameda. The Palomino Fino grapes grow in white albariza soil, and the wine ages for years in oak casks under a veil of yeast called flor, in the town's old bodegas. It is the flor that keeps the wine pale and gives it its fresh, lightly salty and almond-like character.

    Barbadillo was founded in 1821 in Sanlúcar and is run today by the seventh generation of the family. The bodega is the largest producer of Manzanilla in the world. The rebujito arrived in 2023, and the can's turquoise and white summer look was drawn by the designer Antonio López. It is made to be drunk young and cold.

    Tasting notes

    Nose

    Fresh lime and lemon first, then a small whiff of mint. Behind the citrus you find green apple, almond and a faint yeasty note from the Manzanilla.

    Palate

    Light and juicy with clear lemon and lime. The sweetness is soft and kept in check by the dry, slightly salty side of the Manzanilla. The bubbles are fine, and the almond note shows up towards the end.

    Finish

    Clean and fairly short. Lemon peel, a touch of mint and a little salty edge at the end that makes you reach for another sip.

    Serving & Food Pairing

    Serve it ice cold, ideally at 6-8 °C. You can drink straight from the can, but it does better in a tall glass with plenty of ice, a sprig of fresh mint and a slice of lime. There is no need to decant.

    It goes well with what you would get at a Spanish tapas bar: olives, salted almonds, thin slices of ham and fried small fish. Grilled prawns and light shellfish work nicely too. And on a warm day it holds up perfectly well on its own.

    Did you know?

    Barbadillo did not waste time getting started. In 1827, only six years after it was founded, the bodega bottled Manzanilla for the first time under the name Pastora, which is still around. Before that it was mostly sold by the glass in the town's wine bars, and to people who turned up with their own jug.

    What is the difference between a rebujito and a regular Manzanilla?

    Manzanilla is usually sipped on its own from a small glass. A rebujito is a long, cold and light drink where the Manzanilla is mixed with lemon-lime soda and mint. Barbadillo has done the mixing and put it in the can.

    Does Barbadillo Mixed Rebujito taste strongly of sherry?

    No. The aroma is lime and mint. On the palate the Manzanilla comes through more clearly, but it never makes the drink heavy or spirity. If you have never tried sherry, this is a gentle way in.

    Is Barbadillo Mixed Rebujito sweet?

    A little, like a soft drink. There are 8.1 g of sugar per 100 ml, so around 20 g in one can. The acidity from the lemon and lime and the dryness of the Manzanilla keep it tasting fresh rather than sticky.

    What is the best way to drink it?

    Pour it into a tall glass with plenty of ice, and garnish with a sprig of fresh mint and a slice of lime. If you would rather just open and go, the can is made for that.

    Can I make a rebujito myself?

    Yes. Barbadillo's own recipe is one part Manzanilla to two parts lemon-lime soda and a sprig of mint. The can is the easy version, if you would rather not stand on the beach measuring.

    Barbadillo is a bodega from Sanlúcar de Barrameda, founded in 1821 and the largest producer of Manzanilla in the world. It is the same house behind the well-known Manzanilla Solear.

    How should I store the can?

    Cool, dry and protected from light, according to the label. The can is aluminium and opaque, and the best-before date is printed on the bottom.
