Cellers Grifoll Declara has produced wine since 1736 and established commercial wine production in 1880 - the family is among the oldest wine producers in Priorat. The vineyard sits on a steep slope with slate soil at 340-400 metres above sea level and is farmed entirely without pesticides or herbicides. The grapes are hand-harvested and arrive at the winery within three hours, after which they macerate for three days before fermenting with natural yeasts in oak barrels, where the wine subsequently ages on the lees for 15 months.

Solen is aged for four months in oak barrels, which adds extra facets and a rounder structure than is typically found in unoaked Danish white wines.
