Nose: Initially buttery, with golden syrup and fudge notes, leading into some sweet, fruity wine and a hint of dryness. With water, the dryness gives way to a perfumed note with ripe banana notes and woody spices.
Palate: Very sweet. Marzipan, some tropical fruit notes, mixed in with Pedro Ximinez sweet/musty rancio richness, with a thicker, darker bonfire toffee note emerging further into the flavour. A dash of water brings liquorice and cream notes, with a return of the sweet wine from the nose.
Finish: Lingering, with green bananas and a woody spice note.
Overall: Very detailed, complex and developed. It takes a step beyond the Green Spot and adds another dimension to an already great whiskey.

CELEBRATED YELLOW SPOT IRISH WHISKEY MAKES A COMEBACK

Irish Distillers Pernod Ricard has announced a return to the fold for the revered Yellow Spot Single Pot Still Irish Whiskey, which has been skilfully recreated by the dedicated team at Midleton Distillery in Cork. The re-launch underpins the company’s pledge to introduce new Single Pot Still Irish Whiskey expressions each year, as part of its continued commitment to reinvigorate the category.

Part of the ‘Spot’ range of Single Pot Still Whiskeys, Yellow Spot was originally produced, bottled and sold by Dublin-based wine merchants Mitchell & Son. Established in 1805, Mitchell & Son were ageing whiskeys bought from John Jameson’s Dublin distillery in their own casks up until 1968, when the practice of selling whiskey to bonders in cask ceased. From that date, Green Spot was bottled by Irish Distillers Ltd., and is now joined by Yellow Spot 12 Year Old.

The exceptional skill of the Midleton Masters, combined with Mitchell’s old notes on the Yellow Spot expression, has led to the recreation of this 12 Year Old whiskey. Rather than simply being a ‘finished’ whiskey, Yellow Spot is an expression that has been matured for a full 12-year period, in three oak cask types: American bourbon barrels, Spanish sherry butts and uniquely, Spanish Malaga casks. Bottled at 46% ABV and set to be produced annually in batches of just 500 cases, the first bottles will be available in key markets from late May 2012.

Green Spot er et af de ældste irske whiskymærker. Historien bag Green Spot starter hos Mitchell så langt tilbage som i 1887. Mitchell familien var en entreprenant købmandsfamilie som siden 1805 havde drevet forretning i Dublin.
Efterhånden som familie virksomheden voksede, blev sortimentet udvidet med egne aftapninger af den lokale whiskey fra, det dengang i

Dublin beliggende, Old Jameson Distillery. Tomme vinfade og hedvinstønder fra Portugal og Spanien blev påfyldt nydestilleret whisky og lagret i mange år under Mitchell familiens butik i Fitzwilliam Street.

Købmandshandlens kunder kunne i en lang årrække vælge mellem en Blue, Red, Yellow og Green Spot aftapning alle med forskellige aldre og karakter. Det var dog altid Green Spot kunderne helst ville have og whiskymærket overlevede da også tidens tand uberørt helt frem til slutningen af 1960’erne, hvor Jameson destilleriet i Dublin lukkede og produktionen blev flyttet til Midleton destilleriet i Cork.

PURE POT STILL IRISH WHISKEY er en whiskystilart som er særegen for og kun fremstilles i Irland. Whiskeyen destilleres traditionelt i kobber pot stills og langt hen af vejen minder det meste af fremstilling processen om den vi kender fra Skotland.

Pure pot still Irish whiskey adskiller sig dog især på tre punkter, fra skotsk single malt whisky ved:

1) at være fremstillet på en blanding af maltet byg og umaltet byg (green barley). Blandingsforholdet (mash bill) mellem maltet byg og umaltet byg varierer fra whiskey til whiskey og er en velbevogtet hemmelighed, som kun få nøglepersoner på destilleret kender. Den unikke mulighed for at variere forholdet i bygblandingen gør det muligt, at fremstille flere forskellige whiskystilarter på de samme kobber pot stills.

2) at være tredobbelt destilleret hvor skotsk whisky som hovedregel altid er dobbelt destilleret. Den ekstra destillering bruges i nogen henseender til at fremstille en blødere og mere elegant whiskey stilart, men kan også hvis der destilleres på særlig vis frembringe fantastiske rige, cremede og tunge whiskey typer.

3) at de irske kobber pot stills på fx Middelton destilleriet i det sydlige Irland i Cork er kolossale. Den største og nu pensionerede kobber pot still havde en kapacitet på hen ved 75.000 liter.
