    Yellow Spot 12 Year Old 70 cl. / 46 % Single Pot Still Irish Whiskey Distillery Bottling Triple distilled, matured and bottled for Pure Mitchell & Son - Dublin.Green Spot is one of the oldest Irish whiskey brands. The story behind Green Spot starts with Mitchell as far back as 1887. The Mitchell family were an enterprising merchant family who had been trading in Dublin since 1805. As the family business grew, the range expanded to include their own bottlings of local whiskey from the then Dublin-based Old Jameson Distillery. Empty vinfade and fortified wine casks from Portugal and Spain were filled with freshly distilled whiskey and stored for many years under the Mitchell family shop in Fitzwilliam Street.

    For many years, customers of the grocery store could choose between a Blue, Red, Yellow and Green Spot bottling, all with different ages and character. However, it was always Green Spot the customers' preference and the whisky brand survived the test of time untouched until the late 1960s, when the Jameson distillery in Dublin closed and production was moved to the Midleton distillery in Cork. PURE POT STILL IRISH WHISKEY is a style of whisky that is unique to and only produced in Ireland. The whiskey is traditionally distilled in copper pot stills and much of the production process is similar to that of Scotland.

    However, pure pot still Irish whiskey differs from Scotch single malt whiskey in three main ways: 1) it is made from a blend of malted and unmalted barley (green barley). The mash bill between malted and unmalted barley varies from whiskey to whiskey and is a closely guarded secret known only to a few key people at the distillery. The unique ability to vary the ratio in the barley blend makes it possible to produce several different whiskey styles on the same copper pot stills.

    2) Being triple distilled where as a general rule Scotch whisky is always double distilled. The extra distillation is used in some respects to produce a softer and more elegant style of whiskey, but can also, if distilled in a particular way, produce wonderfully rich, creamy and heavy whiskey styles.

    3) The Irish copper pot stills at, for example, the Middelton distillery in the south of Ireland in Cork are colossal. The largest and now retired copper pot still had a capacity of around 75,000 liters.
