Pina Colada history: what do we know?

Who invented the Piña Colada is disputed. The name means "strained pineapple", Wikipedia says. A magazine from 1922 described a drink with sugar, lime, ice, pineapple juice and Bacardi rum. The Caribe Hilton in Puerto Rico credits bartender Ramón "Monchito" Marrero in 1954, while the restaurant Barrachina credits Ramón Portas Mingot in 1963. A third, Ricardo García, also says he made it at the Caribe Hilton in 1953.

According to Wikipedia the early Hilton version was like a milkshake and non-alcoholic, with vanilla ice cream, coconut cream and pineapple juice. Rum came later. In 1954 professor Ramón López Irizarry created Coco López, from which modern cream of coconut descends. In 1978 the drink became the official drink of Puerto Rico.

Our Piña Colada and the IBA recipe

Ours / IBA according to Wikipedia
White rum4 cl / 5 cl
Coconut1 cl coconut milk / 3 cl cream of coconut
Pineapple juice8 cl / 5 cl
Cream1 cl, optional / None
MethodShake in a shaker / Blend with crushed ice

Our version has less rum and coconut and more pineapple than the IBA recipe. The cream makes it a little rounder, if you want that.

About the ingredients

We use Bacardi Carta Blanca as the white rum. We do not have Caraibos Coconut Milk online. If you want coconut and pineapple as a French syrup, there is Monin Purémix Coconut and Monin Purémix Pineapple. They are purémix, not juice and milk, so you will have to adjust the amounts to taste. You will find more rum under rum recipes.

Tips for your Piña Colada

Use plenty of ice and shake for a long time, so the drink gets cold and a little airy. Cold pineapple juice makes a big difference. Use a shaker with a tight lid, and a chilled glass. If you want it creamy without cream, use a little more coconut.

Our verdict on the Piña Colada

It is a drink that needs few things, but gets bad with warm juice and thin coconut. Our version has less rum and coconut than the IBA recipe. It suits summer and pool days, and it should be ice cold.
