Organic Spirits Vodka is an Organic Nordic Vodka, column distilled from winter wheat and bottled at 40%.

The method is short. The winter wheat is column distilled, after which the spirit is blended with water from Kløvermarken to reach the right strength. Right at the end the vodka is seasoned with a distillate of long pepper from Indonesia — and seasoned should be taken literally, because the quantity is small enough that it never becomes a spiced vodka.

The effect is clear enough once you know what to look for. The wheat sweetness gains a warm edge and a lightly floral note that would not be there otherwise. The rest is as vodka is allowed to be: simple, elegant and with nothing to prove.

Nose

Pale and light. Wheat and a suggestion of lemongrass, with a warm spiced undertone a long way back.

Palate

Silky with a clear wheat sweetness. The pepper arrives late as warmth rather than as sharpness.

Finish

Clean and medium. The spice holds on longest and leaves a pleasant warmth in the throat.

Can you clearly taste the long pepper?

No, and that is the intention. The dose is so low that the pepper works like seasoning in a sauce: you would miss it if it were removed, but you do not point at it while tasting. It shows up mostly as warmth in the finish.

Why winter wheat rather than ordinary wheat?

Because the grain gets longer in the ground. Winter wheat is sown in autumn, overwinters and is harvested the following summer, which gathers more starch in the kernel. That means more sugar for fermentation and a fuller spirit to work with.

What does column distilled mean?

That the spirit is cleaned in a tall column with many plates rather than in a pot. The alcohol evaporates and condenses again on every plate, and the result is a clean, high-strength spirit in a single pass — the ordinary method behind neutral vodka.

How is it best drunk?

Ice cold in a small glass if you take it neat. The cold tightens the wheat sweetness and lets the spiced warmth arrive at the end rather than crowd the middle. With food it suits the salty and the rich best.
