Glenallachie Whisky

Billy Walker rescued GlenAllachie from a life as an anonymous blend supplier and turned it into a Speyside gem in its own right. He loves experimenting with casks, and you can taste it in every bottle.
  • GlenAllachie 16 Year Old Past Edition – Sherry Cask Strength by Billy Walker
    Item no.: 22221111115-88874

Some releases look backward without turning nostalgic. GlenAllachie 16 Year Old Past Edition does exactly that — a look back at Billy Walker's early years in the whisky industry, poured at full sherry-driven strength.

    Expert's description

GlenAllachie 16 Year Old Past Edition is a Single Speyside Malt Scotch Whisky, matured in sherry casks and bottled at 57.1% ABV.

Past Edition is the first release in the same anniversary trilogy as the Present Edition, and where the latter looks ahead to new cask experimentation, this one turns to the past — to the classic sherry casks that have defined GlenAllachie's style since Billy Walker took over the distillery.

The sherry casks the whisky has rested in lend it depth and weight, reinforced by its high strength. Bottling without dilution keeps the cask's character in its rawest form, and the result is a whisky that demands — and rewards — patience in the glass.

The whisky was bottled in August 2022 in a run of 4,000 bottles worldwide, making it the more widely available, though still limited, chapter of the anniversary series.

    Tasting Notes

    Nose

Dark sherry, cane sugar, orange and dark chocolate meet dried figs, while the high strength adds a touch of spiced warmth.

    Palate

Rich and full-bodied, with raisins, toasted almonds, dark marmalade and a peppery spice bite, carried by classic sherry tones.

    Finish

Long, warm and spiced, with a dry, faintly tannic finish that lingers.

  • GlenAllachie Moscatel Finish 12 Year Old – Golden Speyside Whisky
    Item no.: 2222223665478-12

Some releases never travel far from home, yet still turn out exotic. GlenAllachie Moscatel Finish 12 Year Old was created specifically for the European market and draws its sweetness from Moscatel casks, giving the whisky a golden hue and a fruit-driven character.

    Expert's description

GlenAllachie Moscatel Finish 12 Year Old is a Single Speyside Malt Whisky, finished in Moscatel casks, bottled at 48% ABV.

The release is part of GlenAllachie's Only for Europe series, created specifically for the European market, where the distillery experiments with cask types rarely seen across the wider range. The Moscatel cask, originally used to age the sweet Spanish dessert wine of the same name, gives the whisky its distinctive golden colour.

The Moscatel finish adds layers of ripe fruit and honey on top of the spirit's underlying Speyside character, and the result is a whisky that stays approachable without giving up complexity.

    Tasting Notes

    Nose

Peaches and cinnamon meet honey, raisins and sweet grapefruit in an aroma that feels both fresh and mature at once.

    Palate

Honey and pineapple unfold alongside orange peel, cinnamon and a light aniseed spice.

    Finish

Medium length and gentle, with a final hint of sweet fruit and spice trailing quietly away.

  • White Heather 21 Year Old Blended Scotch Whisky 48%
    Item no.: 22227865479-1106-19727808

A blended whisky that has been given time to become more than the sum of its parts. White Heather 21 Year Old is built on casks that each matured separately for eighteen years before being brought together for a final marriage in PX and Oloroso puncheons alongside Appalachian Virgin Oak. Only 2,000 bottles have been released.

    Expert's description

White Heather 21 Year Old is a Blended Scotch Whisky, married in Pedro Ximénez puncheons, Oloroso puncheons and Appalachian Virgin Oak casks, bottled at 48% ABV.

The first eighteen years of the whisky's life were spent in used first-fill American barrels, sherry butts and second-fill barrels/hogsheads — a wide spread of cask types, each contributing its own character to the different whiskies in the blend. Only afterwards were they brought together and left to marry in three types of specialist casks, rounding off the story with one final layer of sweetness and spice.

The White Heather brand traces back to Campbell Distillers in the 1950s and was relaunched in 2021 with GlenAllachie and Billy Walker at the helm, giving this 21 year old one foot in tradition and one in present-day craft.

    Tasting notes

    Nose

A layered aroma where mature sherry sweetness meets notes from American oak and a hint of the fresh, robust character of Appalachian Virgin Oak.

    Palate

Round and full-bodied, with sherry spice up front and an underlying sweetness from the puncheons that ties the many cask types together.

    Finish

Long, warm and lightly tannic, with a closing dryness from the Virgin Oak casks.

  • Meikle Tòir The Chinquapin One bottle with golden peated whisky
    Item no.: 059763-615-143

Chinquapin is an American oak species you rarely encounter in Scotch whisky – at Meikle Tòir it becomes a surprisingly spicy frame around the distillery's smoky style.

    Expert description

Meikle Tòir 5 Year Old The Chinquapin One is a peated Speyside Single Malt Scotch Whisky matured in virgin oak casks made from chinquapin oak, bottled at 48%.

Meikle Tòir is GlenAllachie's peated sister series, launched in 2023. The name means "the big pursuit" in Scottish Gaelic. The whisky undergoes a fermentation of around 160 hours, markedly longer than usual, giving the spirit a fruitiness that plays off the peat smoke. The peat comes from the Scottish mainland and sits at around 35 PPM.

The Chinquapin One is named after the American oak species chinquapin, used for the virgin oak casks in this release. Chinquapin oak is rare in Scotch whisky production and known for imparting a more intense and spicy character than common American white oak.

    Tasting notes

    Nose

The nose offers peated smoke alongside sweet vanilla and freshly sawn wood, with a spicy undercurrent of coconut and lightly toasted caramel from the chinquapin oak.

    Palate

The palate combines smoke with a pronounced sweetness of vanilla and butterscotch, while the oak's spice gives a touch of pepper and dry wood structure.

    Finish

The finish is smoky and lightly sweet, with a dry, spiced ending where the oak lingers long after the smoke has faded.

    Item no.: 059763-615-142

Smoke and sherry sweetness in the same glass sounds like a contradiction, but at Meikle Tòir it is exactly that contrast that drives the story forward.

    Expert description

Meikle Tòir 5 Year Old The Sherry One is a peated Speyside Single Malt Scotch Whisky matured in PX and Oloroso sherry casks, bottled at 48%.

Meikle Tòir is GlenAllachie's peated sister series, launched in 2023. The name means "the big pursuit" in Scottish Gaelic and refers to the distillery's search for a peated style that still carries GlenAllachie's signature. The whisky undergoes an unusually long fermentation of around 160 hours, giving a spirit with more fruit and depth than you would normally associate with peated whisky. The peat comes from the Scottish mainland and sits at around 35 PPM.

The Sherry One is matured in a combination of PX and Oloroso sherry casks, layering dark fruit sweetness on top of the smoke.

    Tasting notes

    Nose

Smoke greets you first, quickly followed by dark sherry sweetness – think plum jam and cane sugar – with an underlying aroma of ash and dried seaweed.

    Palate

The palate offers peated smoke and stewed dark fruit side by side, with baking spices and a touch of dark chocolate tying the two sides together.

    Finish

The finish is long and smoky, with a sweet tail of sherry that slowly gives way to ash.

  • The GlenAllachie 1990 35 Year Old by Billy Walker
    Item no.: 22244-987455

Some bottles are a whisky. This one is a piece of distillery history, wrapped in handcrafted woodwork and built around four cask types, one of which is rare enough that it barely exists in any other Scotch distillery's stock. The GlenAllachie 1990 Billy Walker spent 35 years on its way to the bottle, and it shows in every single measure.

    Expert's description

The GlenAllachie 1990 Billy Walker is a 35 year old Single Speyside Malt Scotch Whisky, matured across four different cask types and bottled at cask strength of 50.2%.

The name GlenAllachie derives from the Gaelic for "valley of the rocks," and this release is one of the most ambitious and luxurious the distillery has ever put its name to. The whisky spent its 35 years split across Mizunara virgin oak, American virgin oak, Oloroso Sherry and Pedro Ximénez Sherry - a combination that demands both patience and a sharp sense of when each individual cask has given its best.

The Mizunara oak comes from trees around 200 years old and is used extremely rarely in Scotch whisky production, owing to its scarcity and the particular demands the wood places during processing. Combined with two sherry casks and American virgin oak, the result is a whisky with an intense, rich mahogany colour and a depth that matches its age in full.

The whisky is both non-chill filtered and free of added colour, presented in its most original form.

    Tasting notes

    Nose

Mocha and crystallised cinnamon meet treacle tart, cocoa and toasted hazelnuts, with pineapple, ginger and heather honey lingering in the background.

    Palate

Cocoa and baking spice unfold alongside chocolate-coated raisins, coconut and brandied fruits, underpinned by sandalwood and vanilla.

    Finish

Long and rich, with dried red fruits and a lingering sweetness of honeycomb that stays with you long after the last measure.

    Did you know?

The bottle arrives in a bespoke, handcrafted wooden box inspired by the character of Mizunara wood and traditional Japanese Kumiko woodworking. The box is decorated with four different geometric patterns, one for each of the four cask types the whisky was matured in - a craft that matches the whisky's own complexity.

    Item no.: 22227865438-879219

White Heather traces its roots back to the 1950s, but it is only under Billy Walker and GlenAllachie that the brand has truly come into its own. This 15 year old blended scotch brings together malt and grain whisky from the Highlands, Speyside and Islay under one roof – then matures it all further in GlenAllachie's own cellars.

    Expert's description

White Heather 15 Year Old is a Blended Scotch Whisky at 46% ABV, composed of malt and grain whisky from distilleries across the Highlands, Speyside and Islay, including GlenAllachie's own stocks, and further matured at GlenAllachie in a combination of American oak and sherry casks.

The brand was originally created by Campbell Distillers in the 1950s but lay dormant for decades until Billy Walker and the GlenAllachie Distillers Company revived it in 2017 and relaunched it in 2021. Today, White Heather is a standalone blended brand drawing on the same cask philosophy that has made GlenAllachie's single malts well known.

What sets this 15 year old apart from many other blends is the secondary maturation in Pedro Ximénez and Oloroso puncheons alongside Appalachian virgin oak – a combination that gives the whisky far more depth than the blended scotch category usually offers.

    Tasting Notes

    Nose

Soft and inviting, with honey, ripe apples and a hint of sherry sweetness hinting at the active casks used in maturation.

    Palate

Round and gently spiced, with caramel, walnuts and a delicate fruitiness from the sherry and PX puncheons.

About GlenAllachie Whisky

GlenAllachie was originally built purely to supply malt whisky for blends and remained largely unknown as a single malt for decades. That changed when veteran whisky man Billy Walker took over the distillery in 2017 and began releasing his own bottlings with a strong focus on cask finishes and experimental maturation. For collectors, this shift from anonymous blend supplier to celebrated single malt name is part of the appeal, while beginners can enjoy a classic, full-bodied Speyside style that never gets boring.

History & background

The distillery was designed as early as 1940 by architect William Delmé-Evans, but wasn't founded until 1967 by Mackinlay, McPherson and Co. for use in Mackinlay blends. Ownership changed hands several times over the decades, from Invergordon Distillers to Campbell Distillers under Pernod Ricard and later Chivas Brothers, with a brief closure in 1987 along the way. The real turning point came in July 2017, when Chivas Brothers sold GlenAllachie to The GlenAllachie Distillers Company, led by Billy Walker together with Graham Stevenson and Trisha Savage, all with solid industry experience.

Production & style

The distillery sits at the foot of Ben Rinnes and draws its water from mountain springs, the same sources used by neighbouring Aberlour. All the whisky matures on site in the distillery's fourteen warehouses, and Billy Walker's trademark is extensive use of sherry casks and other cask finishes, giving the whisky far more complexity than it traditionally got as a pure blend component.

Signature style

Full-bodied, Sherry-driven, Complex
Expect dark fruit, spice and a rich sweetness, driven by the carefully selected sherry casks.
