On steep rocky cliffs in Oaxaca grows an agave so slow to mature it barely fits within a human lifetime. When it is finally harvested, that long wait echoes in every glass.
Expert Description
Topanito Mezcal Tepeztate Blanco is a 100% Tepeztate Mexican Mezcal Artesanal bottled at 49%.
The mezcal is part of Topanito's Wild Series, in which the German spirits house Perola highlights rare, wild-growing agave varieties. Tepeztate belongs to the Marmorata agave family, named for its characteristic marbling, and can take up to 30-35 years to mature on steep hillsides and rocky cliffs, often surrounded by wild herbs. The agave has a low sugar content, meaning far more raw agave is needed per litre of mezcal than for, say, Espadín. The agave hearts are processed by mezcaleros at the Amantes de lo Ajeno distillery in San Dionisio Ocotepec, Oaxaca, roasted in earthen pits, crushed on a tahona stone mill and double distilled in copper alembic stills.
