Bisgaardsmark Børglum Kloster is named after one of Denmark's most remarkable medieval monasteries.

  Bisgaardsmark Børglum Kloster Single Malt Danish Whisky is a limited single malt from Søgaard Destilleri in Aalborg, bottled at 46.1% in a 50 cl bottle and presented as a gift set with a whisky glass. Named after Børglum Monastery — an Augustinian monastery dating back to the 12th century in northern Jutland — the whisky pays tribute to the region's deep cultural history. Only 501 bottles were produced, bottled on 13 November 2023. Søgaard Destilleri is part of Søgaards Bryghus in Aalborg, a project that started in 2018 when the distillery equipment was ordered from CARL, a German firm founded in 1869. The distillery focuses on terroir-driven Danish whisky production using grain from North Jutland's islands. The whisky is matured in bourbon oak casks and is unpeated.

  Tasting notes

  Nose

  Soft and approachable with sweet malt and fresh barley grain. Vanilla and light caramel from the bourbon cask appear early, with delicate floral notes and a hint of honey in the background.

  Palate

  Round and harmonious. Sweet malt and caramel lead, followed by fresh fruit notes — hints of pear and green apple. A gentle warming spice develops toward the finish.

  Finish

  Medium-long and smooth, with lingering vanilla and light oak. A clean, fresh close that invites another sip.

  Vindblæst Whisky Søgaard Destilleri Limited Edition is Denmark's first island whisky — four versions of Danish Single Malt Whisky, bottled at 46.1%, available as a set of 4x20 cl bottles from Livø, Læsø, Egholm, and Fur respectively. The concept is built on a collaboration with farmers on four North Jutland islands, all growing the same variety — Odyssey, a malting barley specially suited for whisky production. The same grain, the same distillery, but four different terroirs that produce measurably different flavour profiles from island to island. The raw spirit is matured in used Jack Daniels bourbon oak casks on Livø before bottling. The whiskies are organic and unpeated. The first release took place on 10 June 2023 at Musikkens Hus in Aalborg, with 50 tasting judges from around the world. Søgaard Destilleri is part of Søgaards Bryghus in Aalborg, which began distillation in 2018 using equipment from German manufacturer CARL.

  Nose

  Fresh and fruity with sweet malt as a base. Vanilla and caramel from the bourbon casks provide a classic roundness, alongside delicate floral notes and a hint of honey that varies subtly from island to island.

  Palate

  Smooth and well-balanced, with sweet malt and caramel notes leading. Fruity complexity — pear, apple, a touch of citrus — followed by gentle warming spice. The terroir differences show as nuances rather than contrasts.

  Finish

  Medium-long with lingering vanilla, light oak, and fresh grain. A clean and composed finish typical of bourbon-matured, unpeated single malt.

  Vindblæst White Dog Søgaard Destilleri Limited Edition Danish Raw Spirit is a set of 4x5 cl unaged raw spirit from Søgaard Destilleri's Vindblæst production in Aalborg. Each small bottle reflects the terroir from one of the four North Jutland island partners — Livø, Læsø, Egholm, and Fur — all growing the organic malting barley variety Odyssey, which forms the basis of the Vindblæst whisky series. The raw spirit is clear and uncoloured, as it has not been cask-matured. It is unpeated, and the flavour reflects the pure distilled malt without any oak influence. A White Dog set offers a unique opportunity to understand the starting point of a whisky's journey — and to compare terroir influence at the raw spirit stage.
