    In French it is called Eau de Vie, here in Denmark we call it fruit brandy. The method is basically the same: you collect the best fruit, ferment it, distill it and bottle it. And this is more or less how Fillipa Æblebrændevin has been made from the very beginning, using good North Jutland apples in the hand-built kettles at Nordisk Brænderi. Both the aroma and taste are almost vinous and take you back to childhood apple blossoms on warm late summer evenings. The notes are distinctly fruity, the alcohol is well-balanced and it lingers long and pleasantly in the mouth.

History & Background

Nordisk Brænderi is part of the wave of Danish fruit distilleries that have emerged since the 2010s, where smaller producers have used locally grown fruit rather than imported grapes to make brandy, akvavit and other spirits. This model differs sharply from the French Cognac and Armagnac tradition, where the grape is the very foundation, representing instead a Nordic take on the idea of brandy. The distillery ages its products in oak casks following the same basic principle as the classic brandy traditions, just with Danish fruit as the raw material.
