Our Core Expressions reflect the fundamentals of our dedicated single estate approach to making organic Danish whisky. They are born of our local terroir and our own grain, and shaped through our own processes into a whisky we love and are proud to share with our good friends and guests at the distillery.

A single malt we simply call 'Thy', carrying the flavour of our farm and distillery, where the raw materials come first. A malty, sweet and full-bodied whisky with a touch of Danish beech smoke. The perfect place to start exploring Thy Whisky. Then 'Bøg', our single malt with the signature beechwood smoke that brings back memories of campfires and the smokehouses along the windswept coast of Thy. A soft, comfortably smoky whisky, deep, full and fruity from maturation in old sherry casks.

'Spelt-Rye' is our Nordic take on a rye whisky. Made from rye, spelt and barley alike, it shows what a varied organic crop rotation, our own malting floor and experiments with the grain composition in our mash bill can do for a whisky. Maturation in new oak casks makes it full, fruity, spicy and floral with a fine cask balance.

To reduce the climate impact of producing and shipping our whisky to several new markets, we have designed our very own lightweight bottle and packaging. We believe in terroir and local thinking, and we are committed to working within the constraints and the scale that come with single estate production. Behind every single bottle of Thy, Bøg and Spelt-Rye lies a careful selection of casks for each bottling from our warehouse. Our Core Expressions are available in good whisky shops and in restaurants and bars.

Thy Whisky has spent the past year developing a completely new whisky bottle that is uniquely their own and fits their style perfectly.

The bottle still holds 70 cl, but it is slim, elegant and handsome. It is among the lightest on the market and weighs only 400 g.

Glass moulding takes a lot of energy. Minimal use of energy-intensive resources ought to be a matter of course, just as they recirculate and reuse 99% of all by-products in production every day. The new bottle is unfortunately not CO2 neutral or anything like it - but it represents considerable progress.
On the base of the bottle you will find the coordinates of the distillery.

ABOUT THY WHISKY DISTILLERY
Thy Whisky Distillery is an organic, family-owned distillery on the ancestral farm Gyrup in Thy. With production that is 100% organic and single estate, their dedication to exploring the local Danish terroir in their whisky is plain to see. The distillery aims to create whisky with a strong sense of place and a distinct quality, based on crops from their own land and on local tradition. Sitting between the windswept heaths and dunes of the North Sea coast and the rolling grain fields by the Limfjord, it is obvious that the inspiration comes from the beautiful landscape that has been the family's home for generations.

ORGANIC AND SELF-SUFFICIENT
The whisky is made exclusively from grain grown on their own organic fields. Those fields are farmed on regenerative organic principles, including cover crops and crop rotation, which preserves soil fertility, increases biodiversity and protects the groundwater. The entire process from field to bottle happens in one place.

INDEPENDENT AND FAMILY-OWNED
The family behind Thy Whisky started their distillery in 2010 as farmers, convinced of the quality of their own grain and the flavour it could bring to whisky. Thy Whisky Distillery remains family-owned and independent.

WHISKY TRADITION IN A NEW WAY
Using a distinctive single distillation method, their own home-built malting plant and inspiration from traditional Danish smoking techniques, the distillery creates a unique quality and flavour in their malt whisky.

LOCAL TERROIR
Thy Whisky Distillery is dedicated to producing whisky from crops including both modern and traditional Danish grain varieties that are particularly well suited to organic farming in the Danish climate. They also use local Danish beechwood and peat for smoking the whisky.

LIMITED EDITIONS AND SINGLE CASKS
Since the Thy Whisky family filled their first casks in 2010, they have set out to explore the potential of genuine Danish single estate whisky. Through the distillery's first 14 years they have created a broad range of new makes inspired by their fields, their malt and Danish tradition.

Thy Whisky has released 24 different expressions in the numbered series "Thy Whisky No. 1-24", launched between 2014 and 2024. The series demonstrates how a deliberate choice of raw materials and an insistence on uniting the whole production process in one place can result in a whisky that is not only high in quality but also unique in character.

Many of the distillery's experiments are still resting in the warehouse, waiting to become future vintages of Thy Whisky. As smaller bottlings, single casks, vintage whiskies or new concepts. For many years to come, the distillery's aim is to keep exploring what Danish whisky can be and should be.

Among those bottlings there will be opportunities to keep following Thy's exploration of old Danish barley varieties, local peat, caramel malt, mixed grains, experimental casks and more.
