On the outskirts of Haslev in South Zealand, honey and water settle into something older than the Vikings, older than language itself. At Mjødgård, an old craft is kept alive with local ingredients and patience – and the result arrives here golden, quietly matured in casks that once held port wine.
Expert's Description
Mjødgård Ren Mjød is a traditional Danish mead brewed from water and honey and matured in casks that previously held port wine, bottled at 12% vol.
The mead is brewed from summer and heather honey and left to rest in oak casks from port wine production – a choice that gives the characteristic sweetness a spiced counterpoint from the cask. It is unfiltered, so natural sediment may appear in the bottle, and it carries the 2025 vintage. Behind the bottle sits the microbrewery Mjødgård in Haslev, founded in 2008 by Thomas Priiskorn, who alongside brewing also hosts mead tastings and shares Nordic mythology in the farm's historic buildings.
Tasting Notes
Nose
The nose opens with clear honey, backed by a gentle warmth from the cask and a whisper of nuts.
Taste
On the palate there's a fine balance between sweetness and acidity, with the honey holding everything together without turning cloying, while the nutty notes return alongside a faint spiciness from the port cask.
Finish
The finish is long and honey-laden, with the cask's character sitting like a warm base beneath the sweetness.
