There's a farm just outside Haslev, in South Zealand, where honey from the estate's own beehives meets blackberries, blackcurrants and redcurrants picked in the surrounding woods. Oak chips go into the vats during fermentation, and what comes out is a deep amber mead where the tartness of the berries still cuts through the sweetness.
Expert's description
Mjødgård Skovmjød Skovbær og Egetræ is a Danish Mead made with Danish honey, forest berries and oak, bottled at 12%.
Mjødgård is a small mead brewery in Haslev, South Zealand, founded in 2008 by Thomas Priiskorn, who still brews with raw materials sourced from the local area. Skovmjød is the vintage release, where honey meets blackberries, blackcurrants and redcurrants from the nearby forests, while oak adds a light, dry counterpoint to the fruit's acidity.
The mead is naturally fermented and unfiltered, so a thin layer of sediment can form in the bottle - that's completely normal and can be gently shaken back in before serving. With its pronounced berry acidity and a sweet, rounded finish, this is a semi-sweet mead made both for sipping on its own and for the table.
Tasting notes
Nose
Honey and ripe forest berries - blackberry and blackcurrant - with a light touch of dry oak underneath.
Palate
Tart and fresh up front, led by the berries, before the honey's sweetness and a faint oaky edge take over.
Finish
Long and sweet, with the acidity from redcurrant and blackcurrant returning to keep it lively right to the end.
