    Down in the foothills of the Mourne Mountains in Northern Ireland sits a distillery barely bigger than a garage. Two handmade copper stills, a repurposed shipping container, and a flame under the pots that never goes out - that's Killowen, and it's where this bottle comes from.

    Killowen Barántúil Cask #KDC186 is an Irish Single Pot Still Whiskey matured for its entire maturation in an Oloroso sherry cask and bottled at cask strength, 60.44% ABV.

    Barántúil is Killowen's own single cask series - the name means "authentic" in Irish, which suits the philosophy behind it well. Cask #KDC186 was distilled from a mash bill of malted and unmalted barley, unmalted oats and unmalted rye, and spent three years in a 120-litre Oloroso cask. This marks the first time Killowen has let a whiskey sit in a full-size Oloroso cask for its whole maturation - previous releases in the series typically saw sherry only as a shorter finish on top of bourbon casks. Just 169 bottles were released.

    Killowen distils the old way: open, wild fermentation with no added yeast strains, flame-fired stills, and double distillation - where most other Irish distilleries today triple distil. Cooling runs through traditional worm tubs. The result is a whiskey with more weight and body than you'd typically expect from Irish pot still.

    Tasting Notes

    Nose

    Ginger bread and warm spice up front, followed by ripe apricot and sultana. Underneath sits a trace of almond paste and nutmeg.

    Palate

    Dense and spicy - like biting into a fig tart dusted with brown sugar, followed by something close to pine needle from a spruce forest. The cask strength is felt, but the whiskey carries it well.

    Finish

    Long, with nutmeg over baked apple and peach. A fine example of just how good pot still spice can be when it's allowed to do the talking.
