Its fourth chapter takes the whisky somewhere none of its predecessors have been – deep into the forests of Mongolia.

GlenAllachie Sinteis Part 4 2015 Mongolian Virgin Oak is a Speyside Single Malt Scotch Whisky matured in Pedro Ximénez and Oloroso Sherry casks and finished in Mongolian Virgin Oak, bottled at 58.5%.
Sinteis is Gaelic for synthesis, and the name captures exactly what the series is about: letting two very different types of wood meet inside the same whisky. The first three releases leaned on virgin oak from America, Scotland and France. This time, Billy Walker looked much further east. Distilled in 2015, the whisky spent its early years resting in Pedro Ximénez and Oloroso Sherry casks before being transferred into casks made from Mongolian oak, Quercus mongolica. It's a wood that almost never finds its way into a whisky warehouse, and it brings a character all its own: notes of caramel, honey, floral hints and warm spice layered on top of the Sherry's dark, fruity weight. The result is a whisky where GlenAllachie's familiar sweetness gets a genuinely exotic edge. It's bottled at cask strength, 58.5%, with no added colouring and no chill filtration, so nothing the casks gave it has been filtered away.
Tasting Notes
Nose
The nose opens with freshly baked pastry and butterscotch, where brandy-soaked fruit, cocoa and dark treacle mix with cinnamon and candied ginger.
Palate
On the palate it's rich and full-bodied, with candied hazelnuts, plum syrup and warm baking spices. Baked orange, vanilla, mocha, manuka honey and fig jam take over as it opens.
Finish
The finish is long and warming, with a dry, faintly spiced oak note from the young Mongolian wood that keeps the Sherry's sweetness anchored right to the end.
