    Faer Isles Distillery North Atlantic Akvavit Cask Matured is a Faroese Akvavit aged in cask and bottled at 42%. The distillery is based in Vestmanna on Streymoy and was founded in 2021 by Bogi Karbech Mouritsen and Dánial Hoydal, who set out to use the North Atlantic's harsh, damp climate for slow, complex maturation.

    This small batch expression is made with wild angelica root and stalk, hand-harvested on the cliffs around Vestmanna, adding a mild, green spiciness. Alongside it sits North Atlantic seaweed, which gives the akvavit an unmistakably maritime character and a mineral depth rarely found in Danish or Swedish akvavits. Cask maturation rounds everything off, adding structure and complexity before the spirit is bottled at 42%.

    North Atlantic Akvavit won gold in the Aquavit category at The Spirits Business, where the judges singled out a dry, caraway-forward character on the palate — a mark of how Faer Isles' terroir-driven approach carves out its own space in the North Atlantic spirits world.

    Out on the outer skerries of the Faroe Islands grows a seaweed that smells of truffle and tastes of the ocean itself. For a few weeks each year, when the aroma peaks, divers descend into the cold North Atlantic to pick it by hand. That is the raw, earthy core of this akvavit from Vestmanna.

    Faer Isles Distillery North Atlantic Akvavit Ocean Truffle is an akvavit from the Faroe Islands bottled at 43.4% ABV.

    The bottle comes from Faer Isles Distillery in Vestmanna, a small distillery in the middle of the North Atlantic founded in 2021 by, among others, Bogi Mouritsen and Dánial Hoydal. The distillery's philosophy is simple: whatever can be sourced locally on the islands should end up in the bottle, and this akvavit is no exception.

    The defining botanical is Ocean Truffle, the Faroese name for the seaweed species Vertebrata lanosa. It grows attached to other seaweed along the coast and cannot be farmed or machine-harvested - only divers can find and pick it, and only during a short window around February and March, when its aroma peaks. Faer Isles is the only distillery in the world using Ocean Truffle in an akvavit, and one of just two spirits producers globally working with the plant at all. Because the amount of seaweed is limited by how much the divers can bring up from the cold water, the akvavit is made in small, limited batches.

    Nose

    Earthy and lightly saline, with a hint of mushroom and truffle mingling with cool sea air.

    Angelica grows wild across most of the Faroe Islands, in rock crevices and along the hillsides where the salty wind never really stops. Its root smells sweetly of anise, its stem fresh and green. Together with a touch of seaweed, it becomes the unaged akvavit from Vestmanna that the distillery itself calls Hvonn.

    This is the unaged, non-cask-matured base akvavit from Faer Isles Distillery in Vestmanna - as distinct from the distillery's cask-matured version. The lead botanical is Angelica, known locally as kvan, which grows all over the islands and has traditionally been used in Faroese food and medicine. The distillery uses both the root, which gives a mild, anise-like character, and the stem, which adds green freshness. As in all of Faer Isles' spirits, seaweed also features, adding a maritime touch to this otherwise traditional Nordic spirit.

    The akvavit has picked up international recognition, winning a silver medal at the London Spirits Competition in 2023 and a gold medal at the Speciality Masters in 2022.

    Before whisky exists, there is only this: a clear, powerful spirit straight from the still, with no cask in sight. On the Faroe Islands they call it new make, and this small bottle captures one of the very first moments of Faer Isles Distillery's future whisky, caught before time and wood got the chance to shape it.

    Faer Isles New Make Single Malt is an unaged whisky spirit from the Faroe Islands bottled at 59.5% ABV.

    The bottle holds new make spirit from Faer Isles Distillery in Vestmanna - the clear spirit that comes straight off the stills, before it has ever touched a cask. This particular batch was distilled on the distillery's Müller hybrid still, used before the current Scottish copper stills from LH Stainless were installed. The release was originally reserved for members of Faer Isles' Founders' Club and is counted among the distillery's first single malt spirit releases.

    Faer Isles is working toward a lightly peated whisky with a distinct oceanic character, matured in the traditional Faroese hjallur - an open-slatted timber storehouse where salt, humidity and wind penetrate the casks. This new make spirit, however, carries no cask influence at all and therefore shows the raw, unaged character of Faer Isles' malt spirit.

    Nose

    Clean and fresh with clear fruitiness and a rich, malty sweetness.

    Palate

    Powerful and oily, with malt firmly at the centre and a touch of fruit.

About Faer Isles Akvavit

Faer Isles Distillery is based in Vestmanna in the Faroe Islands and is one of the northernmost distilleries in the world, surrounded by the warm currents of the North Atlantic. The akvavit is the result of years of experimenting with local herbs and seaweed, and carries a distinctive imprint of the islands' raw, salted nature - making it something quite different among Nordic akvavits.

History & Background

The distillery was founded by local whisky and gin enthusiasts who had previously opened the islands' first spirits shop. After two years of experimenting with local herbs and seaweed, the project truly gained momentum in 2019, when a group of investors was gathered and a subsequent crowdfunding campaign secured 1,100 founding members and 637 shareholders. Commercial production began in 2021.

Production & Style

Faer Isles has experimented extensively with different local types of seaweed, found in abundance in the sea around the islands. Whisky casks are stored in traditional drying houses called "opnahjallur," used for centuries to preserve and dry meat and fish, giving the products maximum exposure to the salty sea wind.
