The rum combines matured rum from the South Pacific - from the Ramu River Valley in Papua New Guinea and from Fiji - spiced with cardamom, clove, cinnamon, ginger and vanilla. Because Australia's import and production rules are strict, the rum is blended and spiced on a small vineyard in Orange, New South Wales, then matured for up to three years in ex-bourbon casks under tropical heat.
It is precisely the absence of added sugar that sets Dry Spiced apart from many other spiced rum styles - the spices build the flavour without a layer of sweetness masking the rum's own character.
