Valdespino Vinagre de Jerez Reserva is a Sherry Vinegar from Jerez, Spain made from the Palomino grape, with enough acidity to stand alone in a vinaigrette.
The vinegar is solera-aged for a minimum of 5 years in American oak, the same method used for the house's sherries, giving it a depth and roundness not found in ordinary wine vinegar. Valdespino is considered one of Jerez's oldest and most respected houses, with roots dating back to 1264 and a present-day production that still follows traditional methods.
Tasting Notes
Nose
Dried figs, walnut and a hint of caramelised wood.
Palate
Powerful and tangy, with sweetness from the long cask ageing that balances the acidity.
Finish
Long, round and lightly sweet.
Using It in the Kitchen
Use the vinegar sparingly in vinaigrettes, to deglaze a pan after searing meat, or drizzled directly over grilled vegetables and salads. It's strong enough to carry a simple olive oil dressing on its own.
