The first whisky I am throwing myself at is Thy Whisky No. 23 Hawboen.

It is made from Odyssey barley and carries both peated and unpeated malt.

It has matured in 3-6 year old bourbon casks.

The strength is a sensible 51.5%. The colour is quite pale, but it still leaves plenty of oil behind when swirled around the glass.

The nose has clear citrus, apricot, honey and vanilla. Concentrate properly and you can pick up a little cherry, melon and the tiniest hint of smoke. It really is not much, but it is there. Very pleasant, and something you can nose at for a long time.

For me the palate is shaped by the bourbon cask, malt, white pepper and a slightly bitter grapefruit note. Again there is a touch of smoke, but not a lot. I really have to hunt for it. I had hoped for a bit more sweetness on the palate.

The finish is not especially long. On the other hand, some of the sweetness I missed on the palate turns up here. A little vanilla and nuts for the finale.

Thy Whisky No. 24 8 years

Now it is time for Thy Whisky No. 24, which is also their oldest whisky at 8 years. The strength is 52.1%. I think it is great that Thy Whisky has put an age on it. I suspect that over time people will refer back to their 8 year old when tasting the other things they make. At the same time it feels like a small glimpse into the future of what to expect as their whisky gets older and older.
I have tasted a fair amount of their whisky, so I am very much looking forward to experiencing what they have made once some age starts to show.

The nose is fruit and citrus again. A little more rounded and calm. The notes are quite clear. There is no doubt about grape, tropical fruit, green apple and pear. It smells genuinely lovely and comfortable. Everything has been refined and it is a pleasure to nose. It is always nice to have a whisky where everyone can instantly recognise what they are smelling.

The palate is really good. Full throttle on the fruit and the sweet notes. Here I feel the nose and the palate hang together very well. The whisky also coats the mouth nicely, so there is a good long finish.

A fantastic whisky marking the end of Thy Whisky's series from 1 to 24. I am quite certain this will be the whisky people compare future releases to. A benchmark for Thy Whisky. Well done, and I look forward to whatever they come up with next.
