Chestnut is not the first wood you think of in a whisky context. But Thornæs Distillery from North Zealand has made it work in their favour: Chestnut Double Cask combines the chestnut cask with another cask type for an organic Danish expression at 49.4%.

    Expert description

Thornæs Chestnut Double Cask is an organic Danish Single Malt Whisky bottled at 49.4% from Thornæs Distillery in North Zealand. The whisky has been matured in chestnut casks as part of a double cask process – a combination of two cask types that is rare in Danish whisky. Chestnut casks are traditionally used for wine in southern Europe and give notes of warm nutty spiciness and a fresh, natural fruitiness. Thornæs is an organic distillery in North Zealand producing small batch single malt whisky with a focus on local ingredients.

They are used primarily in Spain, France and Italy for wine and brandy – and give a natural spiciness and nutty character that differs markedly from oak. Thornæs is one of the few Danish distilleries experimenting with chestnut casks in a double cask context.
