Out on the west coast, where the rye stands thick and the wind doesn't care who's in the way, grain goes straight to whisky with no detours. Here it comes in a small 5 cl bottle, ready to open, pour and let the smell of fresh rye bread fill the room.
Expert's Description
Stauning R.Y.E. Miniature is a Danish Rye Whisky matured in new American oak casks and bottled at 48% in a 5 cl bottle.
This is Stauning's R.Y.E. in miniature form, the rye whisky the West Jutland distillery has built its name on. Rye has been grown in Denmark for more than 2,000 years, and here it gets to be the star: Danish rye and barley, both floor-malted at the distillery itself. The spirit runs twice through Stauning's 24 small pot stills, which are heated by open fire. It's an old-fashioned and awkward way of doing things, but it gives the whisky a toasted, lightly caramelised side. It then spends three to four years in new American oak casks, and the oak adds vanilla and a peppery edge on top of the rye's spicy character. The whisky is non-chill filtered and natural in colour, so a little sediment can show up in the bottle.
Stauning was started in 2005 by nine founders, and the first bottles reached the market in 2011. R.Y.E. has won gold at IWSC 2024, among other medals. 5 cl is enough for one proper dram, or two small tastings if you're sharing.
Tasting Notes
Nose
Fresh rye bread straight away, then wine gums and a touch of pepper.
Palate
Dried fruit and ripe cherries, held up by peppery oak. Vanilla and citrus peel soften things along the way.
Finish
Peppery at first, then long, fruity and gently sweet.

Did You Know?
The fire under Stauning's stills can reach around 650 degrees. That fierce heat is what gives the rye whisky its toasted, almost caramelised notes, and it's a technique most distilleries dropped long ago.
