At Smith & Cross, only pot stills are used to produce their very characteristic rum. Without filtration, the rum takes on a depth and richness. It is as rum was in the beginning; raw, strong and powerful. It works brilliantly for mixing and is also great for blending with other rums. This new rum from Smith & Cross represents the distinctly flavorful and aromatic style that made Jamaica rum famous in the late 19th century and early 20th century. It contains only Wedderburn and Plummer distillates, which are famous for giving off notes of exotic fruits and spices. The complexity of the style made the rum a frequently used ingredient in many classic cocktails... Smith & Cross dates back to 1788, as one of England's oldest sugar and spirit producers. Over time, the company and employees became more specialized in Jamaican rum, in the long underground tunnels along the The River Thames in London... Throughout the 19th century and into the early 20th, Jamaican rum emerged with its deep hues and pleasant aromas. In the mid-20th century, and especially in the late 50s, a lighter and sweeter style was introduced; on par with the products we know today. This type was made by column distillation Smith & Cross Traditional Jamaica is blended from a Wedderburn distillate aged for just under a year and a Plummer distillate aged between 18 months and 3 years. Both distillates are from pot distillation. The style doesn't necessarily gain more from longer aging, as the wood can go in and dampen the character and aroma of the rum too much. The heavier styles of Wedderburn and Plummer were made by combining molasses, sugar juice and syrup from surplus sugar production, as well as the leftovers from the previous distillate. A tradition in Jamaica has been to use wild yeast in the fermentation process, which clearly gives the rum its special richness and flavour. The result is a unique rum with elegant local character.
