Signatory - the easy and safe choice
Signatory is an independent bottler of whisky that selects its own casks at various distilleries around Scotland. They are well known for their cask strength whiskies among other things, and for their un-chill filtered collection, where they try to preserve the natural oils in the whisky. Beyond that they have a number of different ranges, including Signatory Vintage, Signatory Rare Reserve and Signatory Silent Stills.

It can be very hard to choose whisky in a large market, and the number of different whiskies within a single distillery alone can be enormous. Choosing something from Signatory can therefore make the process easier. Signatory only tries to select special, good casks, and they have been named best independent bottler in various contexts several times. So you can be confident the whisky has been chosen by whisky experts and that the quality is usually top notch. Even so, you still need to make sure you choose a whisky with flavour notes that suit you. Listen to our podcast here:

This time I have tried a broad selection of whiskies from Signatory, all of which were lovely in their own way, and in many of them you could find the character of the individual distilleries. As always the quality is top notch when you choose something from Signatory (in my opinion), and I can therefore warmly recommend picking something from Signatory, who have more than 30 years of experience in cask selection.

Signatory - tasting notes

Signatory - Miltonduff 2015 - 1st fill bourbon, 8 year old whisky at 57.1%
Colour: pale, mild gold.
Nose: sweet with vanilla, pear and classic oak notes.
Palate: warming to start, then pear, barley malt and sweetness from the bourbon cask. Vanilla and stone fruit too.
Finish: pear and oak hang on. Beyond that it warms because of the high strength, which can be toned down with a little water.

Signatory - Bunnahabhain - 1st fill oloroso, 11 year old whisky at 46%
Colour: light gold and brownish.
Nose: moderate smoke, behind which come toasted rye bread, dark chocolate, sherry and a hint of raisin.
Palate: moderate smoke, nuts, a little leather and lightly spiced.
Finish: lovely lingering smoke with mild sweetness and sherry.

Signatory - Ben Nevis - 2nd fill oloroso, 9 year old whisky at 46%
Colour: pale, mild gold.
Nose: raisin, mild sherry, lightly spiced and a slight burnt edge.
Palate: intense sherry sweetness to start with undertones of citrus and light spice.
Finish: nuts, toffee, fruit and apple.

Signatory - Speyside (M) 2011 - 1st fill oloroso, 13 year old whisky at 57.1%
Colour: mild golden brown
Nose: sherry, pepper, apple crumble, tobacco, chocolate and vanilla,
Palate: clear sherry, floral, dark chocolate and a little spirity because of the high strength.
Finish: lingering sweetness and sherry plus mild oak notes.
Add a little water and a nose of honey and vanilla appears, and it loses the sharpness from the high strength.

Signatory - Longmorn - 1st fill bourbon, 12 year old whisky at 57.9%
Colour: pale and yellowish.
Nose: clear vanilla and honey. Plus a sweetness, peach and a hint of oak. Otherwise very classic whisky traits.
Palate: honey-like sweetness, apple and lime hiding slightly, and a little spirity.
Finish: oak and fruity, and it dries out a little at the end.
Add a little water and pear appears on both nose and palate.

Signatory - Macduff 100 proof exceptional - 16 year old whisky at 57.1%
Colour: gold, lightly brown.
Nose: summer berries, lemon, salted caramel and light honey.
Palate: plum, apricot, sherry and plenty of sweetness.
Finish: cashew nuts, lightly peppered.
Otherwise very mild on the spirit given the high strength.

Signatory - Aultmore 100 proof exceptional - 17 year old whisky at 57.1%
Colour: gold, lightly brown.
Nose: mild with a hint of nuts, oak and cherry.
Palate: sherry-sweet with oak notes. Warms because of the high strength.
Finish: the whisky dries out a little on the tongue, otherwise the sherry notes carry on.
