Sixteen years is a long time for a rum. Long enough for fresh green apples and juicy grapes to pick up company in the form of dried fruit, vanilla and a dry, cask-driven finish.

    Expert Description

S.B.S Dominican Republic 2009 Bourbon and Cognac Cask is a Dominican Rum matured in ex-Bourbon and Cognac casks and bottled at 52%. It is made from sugarcane juice and was distilled in a column still in 2009. After sixteen years in cask, 1423 World Class Spirits bottled it in February 2025 as part of the S.B.S Single Barrel Selection series.

Ex-Bourbon and Cognac casks together give full dried fruit and creamy vanilla on the palate, and the rum finishes dry, clearly marked by the casks. The sugarcane juice is behind the fresh fruitiness on the nose.

Only 386 bottles were filled, all of them bottled exclusively for the Danish market.

    Did you know?

Cognac has to be aged in oak, and almost always it is French oak. A Cognac cask has therefore typically held a dry, grape-driven spirit before the rum goes in.

Frequently Asked Questions About S.B.S Dominican Republic 2009 Bourbon and Cognac Cask

What does S.B.S Dominican Republic 2009 taste like?

Fresh green apples and juicy grapes on the nose, followed by full dried fruit, creamy vanilla and ripe grapes on the palate. The finish is dry and cask-driven.

Why does rum from sugarcane juice taste different from molasses rum?

Rum made from sugarcane juice is typically fresher and greener in its fruit than rum made from molasses, which often gives a darker and sweeter character. Molasses is a thick by-product of sugar production, while sugarcane juice is the fresh sap from the cane. That fits the green apples and grapes on the nose here.

Should a rum at 52% be drunk neat?

Yes, it is best neat and at room temperature in a whisky glass. A few drops of water can open up the aroma, but the rum is not so strong that it needs it.

What goes well with S.B.S Dominican Republic 2009?

Dried fruit, nuts and dark chocolate mirror the full flavour of the rum. A piece of hard, aged cheese can also work, because the finish is dry.

Is S.B.S Dominican Republic 2009 a rum for collectors?

It is first of all a rum for drinking, but a limited run, sixteen years in cask and an exclusive bottling for the Danish market make it interesting for those who want bottles that cannot be found elsewhere.

What is S.B.S, and who is behind it?

S.B.S stands for Single Barrel Selection and is a series of single cask bottlings from 1423 World Class Spirits, a Danish company founded in 2008. 1423 selects casks from distilleries around the world instead of distilling itself.
