Patridom XO Islay Cask Finish is a Dominican Republic Rum-based Spirit Drink, distilled from fresh sugar cane juice and molasses on column stills, tropically aged 12 to 15 years and finished in casks from peated Islay whisky, bottled at 44% with no chill filtration.
This edition of the Patridom XO range takes the house's classic solera-inspired blend and lets it rest in casks that previously held peated whisky from Islay in Scotland. The extra process lends the rum a pronounced smoky character unusual in the Dominican rum tradition, and the result is a complex crossover between two spirits traditions. The bottle was filled in August 2022 in 1,886 copies.
The result is a sweet, lightly smoky rum, where coffee and soapy tones meet a gentle spiciness.
