    Most chocolate liqueurs chase softness. This one goes the other way. Mozart Dark Chocolate is thin like a spirit, dark brown with golden reflections, and it tastes of the cocoa bean before anybody stirred cream into it.

    Mozart Dark Chocolate is an Austrian Dark Chocolate Liqueur from Mozart Distillerie in Salzburg, built on a maceration of 87% cocoa with no cream and bottled at 17%.

    The absence of dairy is the whole point. Where the rest of the range uses cream to round the cocoa off, this bottle stands alone on the cocoa maceration, which makes it vegan, lactose-free and gluten-free. The texture is thin and very fluid rather than creamy, and that changes how it behaves in a glass.

    The flavour leans bitter without drying out. The cocoa carries a smoky, almost herbal edge that many people associate with bars of 80% and upwards, and underneath it vanilla and caramel keep the balance. The producer also points to a trace of toffee through the middle.

    With no cream in the recipe it mixes differently. It does not curdle in citrus, it does not fall apart in a shaker with something sour, and it works where a cream liqueur would ruin the clarity. Among its medals are gold at the World Spirits Award 2022 and gold at the Meininger International Spirits Award the same year.

    Tasting notes

    Nose

    Dry and dark. Roasted cocoa first, then a smoky, almost herbal tone, and finally vanilla settling gently across the top.

    Palate

    Very fluid and bittersweet. Cocoa fills everything at the start, sharp and almost powdery, until caramel and toffee take over and round it out through the middle.

    Finish

    Long and dry. Sweetness disappears quickly, leaving bitter cocoa and a faint smokiness that stays put.

    Did you know?

    The cocoa comes from West Africa and is a blend of the Forastero and Trinitario varieties, while the vanilla is genuine Bourbon vanilla from Madagascar. Those two raw materials are what give the liqueur its smoky edge and the soft vanilla tone under the bitterness.

    Does Mozart Dark Chocolate contain cream?

    No. It is the only bottle in the range without dairy and is vegan, lactose-free and gluten-free. Instead of cream, a maceration of 87% cocoa carries the whole flavour, which is why the texture is thin rather than creamy.

    How bitter is it?

    Clearly bitter, but not dry like raw cocoa. The bitterness comes from the high cocoa content and carries a smoky edge, while vanilla and caramel lay a softer layer underneath. It is noticeably less sweet than a standard chocolate liqueur.

    How do I use it in cocktails?

    Does it need refrigerating once opened?

    No, that is not necessary. Without cream it keeps far better than a cream liqueur, and a cool dark cupboard is plenty. The fridge does make it tighter and less sweet, if that is how you prefer it.

    Can it be used for baking?

    Yes. It suits fondants, mousses and ganache, where it adds cocoa without bringing dairy into the recipe. Being very fluid, it does not alter the consistency of a batter the way a thick cream liqueur would.

    What separates it from the white edition?

    Everything except the producer. The white one is creamy, milky and led by vanilla and cocoa butter, while this is thin, dark, bitter and contains no dairy at all. The two sit at opposite ends of the range.

    How long has Mozart been making chocolate liqueur?

    Since 1954, when the distillery was founded in Salzburg. The brand is built around the most famous son of the city, and the house has stayed with cocoa as its raw material rather than spreading across the whole spirits shelf.
