Jawbox Small Batch Belfast Cut Irish Classic Dry Gin is a Northern Irish gin from the Jawbox Spirits Company, bottled at 43%.
The gin is built on eleven botanicals, including juniper, lemon, cubeb pepper, angelica root, coriander seed, cassia bark, orris root, grains of paradise, cardamom, liquorice root and local Black Mountain heather.
Most botanicals are steeped and boiled, while three of them are vapor infused to preserve their delicate aroma.
The gin is distilled slowly in a traditional copper pot still, after the botanicals have steeped overnight in the warmed spirit, giving maximum influence from each ingredient.
Tasting notes
Nose
The nose is big and bold with juniper and pine, balanced by coriander and clean citrus.
Palate
The palate starts with peppery juniper, followed by fragrant angelica and citrus, developing towards fresh pine and cardamom.
Finish
The finish is complex with a hint of reddish earthiness.
