Deanston is known for pale honey and bourbon wood. Put the spirit in a first fill sherry cask for thirteen years and the house becomes almost unrecognisable.

    Expert description

Deanston 2007/2021 Signatory Vintage 13 years is a Highland Single Malt Scotch Whisky matured in a first fill sherry butt and bottled at cask strength of 64.5% without added colouring.

The cask carries the number 900146, was filled on 14 June 2007 and emptied on 12 March 2021. The outturn was 624 bottles. Signatory Vintage was founded in 1988 by Andrew Symington and buys casks from distilleries across Scotland. Deanston rarely sells casks on, so an actively sherried version like this exists essentially only through independent bottlers.

    Tasting notes

    Nose

Dark and concentrated. Raisin, fig and orange peel, with cocoa, walnut and a warm spiced note from the wood.

    Palate

Massive but round. Dried fruit, dark chocolate and caramelised sugar, with Deanston's honey beneath the sherry and a peppery warmth from the strength.

    Finish

Very long and dry, with nuts, dark fruit and a persistent spiced warmth.

    Flavour profile

    Investment potential

Medium. 624 bottles from one first fill sherry cask at high strength, from a distillery that rarely appears with independent bottlers.

    Did you know?

Deanston's own range is almost exclusively bourbon matured. That makes the independent sherry bottlings the only place to taste what the house spirit does in dark wood — and they are therefore in more demand than the bottle count alone would explain.

Frequently asked questions about Deanston 2007/2021 Signatory Vintage 13 years

What does first fill sherry butt mean?

That the cask held sherry and is then filled with Scotch for the first time. The wood is still saturated, and the cask influence is far stronger than in a refill.

    Is 64.5 percent too strong?

Not if you approach it carefully. Taste a small amount neat first, then add water drop by drop. The whisky changes markedly along the way.

Why do you rarely see sherried Deanston?

Because the distillery's own range uses bourbon casks almost exclusively. Sherried versions come essentially only from independent bottlers who bought casks and chose a different direction.

    How many bottles exist?

624 bottles from cask number 900146. The release cannot be made again, as the whole outturn comes from that one cask.

    What does natural colour mean?

That no caramel colouring has been added. The dark colour comes purely from the sherry cask, a good sign that the wood was very active.

    What defines Deanston?

A soft, honeyed and unpeated Highland style from a converted cotton mill by the River Teith. See the rest of the region in our Highland Whisky.
