Deanston 15 Year Old / Organic/ Unchillfiltered 70cl / 46.3% Highland Single Malt Scotch Whisky Distillery BottlingDeanston The distillery is located on the banks of the River Teith in a village community that grew up around a cotton mill. The site is dotted with tales of the rich history that has developed here over generations. The old mill has been given a new lease of life in the form of an expertly run single malt whisky distillery. True to the legacy of its predecessors, Deanston Distillery follows whisky-making principles that are as old as the small community that surrounds the distillery. Everything is done by hand - no modern technology is used at Deanston! The best Scottish ingredients are used to help create this unique single malt and the barley, for example, is grown in the surrounding fields. Old traditions are blended with new, offering Deanston a genuine alternative for the curious public. The idea couldn't be more simple. We take the finest ingredients that the area has to offer. Be it bold, organically grown barley - clever local knowledge - soft water from the River Teith - and then we just wait. In a first for Deanston, this rare 'Organic Single Malt Whisky' has been handcrafted by a small team of craftsmen who know the traditional distilling methods like the back of their hand - not to mention their inherited ability to produce quality.

Monitored and documented by the Organic Food Federation, this unique whisky is organic from start to finish before being transferred to new oak casks to rest undisturbed for 15 years in our vaulted warehouses under Deanston Distillery. The result is a smooth, fruity single malt with sweet notes of oak and vanilla, added with the hallmark Deanston rich honey sweetness. We have not chill-filtered this dram to preserve its natural flavours and aromas. This brings out the best that nature, ingrained knowledge and patience can enrich us with. From a very limited annual production, we have only received 300 bottles of this our very first organic Deanston. This is obviously quite a milestone.Deanston is one of Scotland's exciting, yet little-known distilleries. It was established in the mid-1960s whisky boom in a 17th century former cotton mill near the Perthshire town of Doune. It is characterized by its self-sufficiency. Not only does the distillery get all its water from a dam on the River Teith, but the dam also drives a turbine that supplies it with electricity. In fact, the power supply is so great that several kilowatts can be sold to the nearby community.Deanston is one of three distilleries owned by Burn Stewart Distillers Ltd. Around 75% of Deanston's production has previously been sold to the US, meaning the whisky was quite overlooked in European markets, but the launch of the new 12-year-old will certainly change this situation in the near future. Ian MacMillan, Master Distiller at Burn Stewart said: "We want to emphasize the simplicity of the whisky process at Deanston, so we don't add caramel or use over-complicated techniques. We believe the result is a whisky in its most natural form and we are very proud of that. In our new 46.3% version, we put the whisky in brand new casks for a few weeks before bottling, as this gives us some extra sweetness. We already have a sweeter whisky with more oak due to the lack of chill filtration."Deanston Distillery, located on the banks of the River Teith in the southern highlands of Scotland is known for their eco-friendly approach to whisky making. Formerly a cotton mill, Deanston generates all of their own power from the river using its own hydro plant. Bottles and packaging are made of recycled material, and the barley grown on site i certified organic.
