The gin is distilled with lemon balm and other herbs grown in the distillery's own botanical garden on the Harrington estate.
The combination of classic juniper pine with lemon balm's honeyed sweetness gives the gin an unusually fresh, green character.
The menthol-like finish gives a sparkling, refreshing edge that sets the gin apart from more traditionally dry London Dry styles.
Tasting notes
Nose
The nose has a mossy green quality, reminiscent of a sprawling garden after a much needed rain, with juniper holding firm though achingly sweet, as though the pine had drowned in a lemony honey.
Palate
The palate is a fresh and clean explosion, full to the brim of fresh green notes, along with a robust juniper core, with the sweetness rushing the tongue and bringing an unexpected, minor hint of chocolate.
Finish
The finish is minty, providing a glorious burst of sparkling tones.
