Sincere Barrel Aged Edition is a Paraguayan cask-aged organic gin from The Conscious Choice, bottled at 47%.
The base is distilled from untreated, organic sugarcane juice, infused with botanicals such as angelica root, star anise, cloves, cinnamon, lemongrass and the indigenous herb congorosa.
The gin ages for 45 days in bourbon casks, adding warm spice notes from cinnamon and cloves alongside the classic juniper.
The ageing in American whiskey casks gives the gin both complexity and a golden colour, setting it clearly apart from the house's Pure Edition.
