Out on the Jutland bog the peat waits in dark layers of old plant matter, cut and dried the old way. Sall Whisky digs it up with a local peat guild and smokes their malt with it until the smoke sits deep in the grain. Tørv 2.5 is round five in that story - same fields, same stubborn peat.
The Expert's Take
Tørv 2.5 is a peated Danish Single Malt Whisky matured in a combination of ex-bourbon and ex-sherry casks, bottled at 51%.
Tørv is the smoky side of Sall Whisky Distillery's core range, sitting alongside the softer Muld and the sherry-driven Glød. The barley for 2.5 is the organic varieties Prospect and Evergreen, grown on the distillery's own fields Kvolbæk and Gejlund - this time drawn from two harvest years, 2020 and 2021, because Sall would rather use what the fields actually gave than wait for one uniform crop. The malt is a mix of pale and Vienna malt, smoked with Danish bog peat from North Jutland, supplied by the distillery's friends at Tørvebisserne in Moseby. The whisky is double distilled in direct-fired copper pot stills - a slower, more hands-on method than most young distilleries bother with. From there it rests in a combination of ex-bourbon and ex-sherry casks before being bottled without chill filtration or added colour in August 2026. Only 850 bottles were filled from this batch.
Tasting Notes
Nose
Smoke arrives first - earthy and light, closer to fresh bog peat than a heavy Islay style. Behind it sits sweetness from the pale malt, with a touch of honey.
Palate
The smoke carries through onto the palate, met by a tart-sweet edge from the sherry casks and a rounder, softer character from the ex-bourbon casks.
Finish
Long and smoky, with a dry, peaty edge that slowly gives way to a faint malt sweetness.

Did You Know?
The peat for the Tørv series isn't dug by Sall themselves - it comes from Tørvebisserne, a small group of friends in Moseby, North Jutland, who cut peat from the local bog the old-fashioned way. Danish bog peat has a completely different composition of plant matter than Scottish peat, and that difference is what gives the Tørv series its own smoke character instead of just copying Islay.
