When I think of Canada, whiskey is not the first thing that comes to mind.

The only thing I could think of was Canadian Club, which I have tasted. I think it was at a disco, and I don't remember much about it. But is there more to discover and experience in this huge country?

WhistlePig Canadian Club is a fairly new distillery that started up in 2007. The distillery used to be an old farm where animals used to live. One of the animals was Whinston the pig, which was of the Kunkune breed. He walked around the old barn and had a good time, and when he grunted, it became a whistle, hence the name WhistlePig. I love the story. The pig has also been given a small discreet place on the label.

bottle is really nice, by the way.

The fine oak in Canada is one of the things they make a big virtue out of telling about. They call it Vermont Estate Oak. This is the oak used in their whiskey. It grows around their distillery and is characterized by being some of the northernmost oak produced in the world. The short period of time the oak can grow means that dense rings are formed in the oak, which then make a unique impression on the oak barrels in which the whiskey is made.

The other thing I notice is that it's a rye whiskey. Normally I'm not super impressed with rye, but here I have to say that they have hit the balance really well. Without too much rye bread.

Nose: It's very intense right away. There's caramel and vanilla first. Then there's dried fruit, raisins and dates. It's really delicious. A bit of milk chocolate at the end. A scent that wants to go forward and out of the glass.

The taste: Very long and intense. The sweetness is full on and just keeps going. Lots of oak flavors. You can clearly taste that the special oak has been used. It goes on and on. It is quite well balanced with the appropriate alc. of 46%.

Finish: It really is a long finish. After tasting the whisky, I left the glass standing and didn't rinse it off. My wife came over a few hours later and said, mmmm what smells so good. It was the glass on the kitchen table that was still giving off a scent. It was vanilla still hanging in the glass.

I am impressed that they at WhistlePig have so quickly tracked down some delicious whiskey. It's also their best bottle from their core range, but still well done. I now know that Canada is more than ice hockey and mountains. They also have WhistlePig.
