    One Oloroso butt, filled on a May day in 2005 and left alone until seventeen winters had passed. No water added, no colouring, no other whisky blended in. Just the one cask and the dark, spiced mark Orkney left on it.

    Orkney 17 (HP) 2005/2023 Signatory Vintage is a Single Malt Scotch Whisky matured for seventeen years in a single Oloroso Sherry Butt and bottled at cask strength, 55.6%.

    Orkney is the code independent bottlers use when they have bought casks from Highland Park but may not print the distillery name on the label. The letters HP in the product name are as close to a pointer as the trade gets. The cask carries the number DRU17/A63 and goes by the designation Cask #8.

    It was filled on 7 May 2005 and emptied on 23 January 2023, yielding 596 bottles of natural colour whisky. Several sister casks were distilled on the same day, but each one matured on its own, and this one landed at the spicier end of the family.

    An Oloroso Sherry Butt holds around 500 litres and is the largest cask size in common use in Scotland. Less wood in relation to liquid means slower maturation, so after seventeen years the sherry reads as dried fruit and nuts rather than as a layer of sweetness laid on top. Beneath it, Orkney heather peat runs as a thin, mineral smoke.

    Tasting notes

    Nose

    Raisins, orange peel and a seam of dark chocolate. Underneath sits a dry, mineral smoke, closer to wet stone than to a bonfire, with a trace of old leather.

    Palate

    Full and warm from the first sip. Dried fig and vanilla ride on a spiced sherry core of black pepper and clove, and the smoke shows up only at the end, a thin thread drawn through the sweetness.

    Finish

    Long. The sherry sweetness lingers while salt and smoke draw a cool, maritime line across it and leave the mouth dry.

    Is it worth investing in?

    It carries several of the traits collectors look for. The whisky comes from one single cask in a closed release, it is bottled at cask strength with no water added, and it holds seventeen years of Orkney spirit, which grows harder to find as an independent bottling. Once the cask is empty it cannot be filled again.

    What makes Cask #8 different from the other casks filled the same day?

    The spice. Several casks were filled on the same day in May 2005, but each matured on its own and the character of the wood decided the rest. Cask #8 landed with more pepper and dried fig and less of the soft raisin sweetness the sister casks show.

    What does Orkney 17 (HP) actually stand for?

    Orkney is the island group the whisky comes from, the number is the age, and HP is the shorthand the bottler uses for the distillery it may not name. The combination points to Highland Park, by far the most common source when an independent bottler puts Orkney on the label.

    How is a cask strength whisky best approached?

    Start neat, then add water drop by drop. The alcohol closes down part of the aroma, and the first few drops open the sherry and draw the smoke forward without costing you the body. Use a tulip-shaped Whisky Glass to gather the aroma, and give it a quarter of an hour if you have the patience.

    Why does it taste of both sherry and smoke?

    Because the two layers come from different places. The smoke was built into the malt on Orkney, where the peat is cut from treeless heather moorland, while the dark fruit comes from the Oloroso cask the whisky has rested in since 2005. Seventeen years have grown them together, so the smoke runs as a mineral undercurrent beneath the sherry rather than beside it.

    A Scottish independent bottler founded in 1988. The house is known for bottling single casks on their own instead of vatting them together, and for printing cask number, distillation date and bottling date on the label so a bottle's history can be traced back to the day the cask was filled.
