For 125 years freight wagons were repaired in the workshop halls beside the railway station in Nyborg. The tracks are still there. Inside the buildings there is copper now, and the smell has shifted from oil and iron to fermenting wheat malt.

Fionia Vodka is an Organic Danish Vodka from Nyborg Destilleri on the island of Funen, triple distilled from organic wheat malt and bottled at 38%.
Nicolai and Niels Rømer fitted the distillery into the old railway halls in 2017 and put a restaurant beside it. The house is today one of the largest producers of organic spirits in the country, and organic is not an option box here — it covers the whole range, from whisky through gin to rum.
Fionia is built on malt rather than unmalted wheat, and it shows. Malting releases sugar and leaves a bready character that three distillations do not scrub away entirely. Bottling at 38% instead of the usual 40% does the rest: a little less alcoholic bite, a little more room for the grain.
Tasting notes
Nose
Soft and pale. Fresh bread dough and a hint of lemon peel, with no sharp alcohol edge.
Palate
Light and gliding. Malt sweetness sits mid-tongue, followed by something herbal and a slender peppery warmth.
Finish
Clean and brief. A dry malt trace lingers while everything else lets go quickly.
